Everyday Mixed Veg Curry

One of my foreign friend asked me if i cook this elaborate everyday for dinner as i maintain the cook blog. To be honest I don't cook this elaborate everyday, in fact no chef i guess. :-) As i work full time and in the midst of chauffeuring my kids to daycare and their evening activities, usually i don't find much time to prepare an elaborate dinner. But, I do manage to rely on my everyday easy recipes in such rush time. So today here, I am presenting one of such easy vegetable curry that goes very well with freshly made roti or store bought ready made chapati. Though i like freshly made soft rotis to serve my family, most of the times i do buy ready made chapthi and will stack in the freezer. They will come to rescue in such rush evenings for dinner or we can still feed those unexpected guests with tummy full meal. But i am selective with my picks when i buy chapati and make sure i buy only chapati made with whole wheat or multi-grain. When I am not making from scratch at least I have to be little picky, Right!!! :-))

Everyday Recipes ~ Mixed Veg Curry



This mixed vegetable curry is cooked in pressure pan, where you let it cook with out attending at the stove. You have to put all the ingredients in timely manner and close the lid and get fresh up or help your kids in home work,while Dinner will be ready in minutes....!! This is very less spicy and goes well with your roti and will delight your kids also. Here is the recipe Enjoy!



Ingredients:
Potato - 2 ( medium)
Carrot - 1
Onion - 1
Tomato - 2
Green Chili - 1
Turmeric powder - 1 tsp
Salt - 2 tsp
Red Chili Powder - 1 tsp
Coriander Powder - 1/2 tsp
Oil - 1 Tbsp
Cilantro - 1 Tbsp
and Ingredients for Indian Tempering

Cooked in Pressure Pan

Method:

  1. Heat the oil in pressure pan (Prestige) and make the Indian Tempering / Thadka.
  2. Add the Chopped Green chili and Onions. Saute for 1 min and add turmeric powder and 1 tsp salt.
  3. Mean while, peel and chop the Potatoes and Carrot into small cubes.
  4. Once the onions are translucent, add the Chopped Potatoes and Carrot to the pan.
  5. Close the lid loose and let it cook for 2 min. Now Add the chopped tomatoes to pan and cook for 2 min.
  6. add remaining salt, red chili powder and coriander powder.
  7. Close the lid to cooker tight and cook under steam for 1 whistle and turn off the heat.
  8. Let it cool and remove the lid, mix it well. taste and adjust the seasonings. 
  9. Transfer it to bowl and garnish with Cilantro. 

Dinner is Ready Now!!!! if you excuse me I have to go :-))

Tips:

  • Today I have added bell pepper and baby corn also to my curry to increase vegetable servings. 
  • You can add variety of vegetables like Cauliflower, green beans, baby corn, brocolli etc.
  • If you add baby corn or broccoli, add these after step 8 and cook it for 3 or 4 min. If these soft vegetables gets cooked under pressure, they get mush up.
