Aloo Kurma ~ Potatoes Gravy with Yogurt and Spices

Recently I have posted a cool cucumber raita and showed how it can compliment the spicy rice dishes like Pudina Pulao, Biryani etc..But today I am featuring a recipe which is the opposite of above and that is Aloo Kurma. This is again one of my mom's best recipes and my favorite. When ever she makes a lightly flavored Mix Veg Pulao then this Aloo Kurma is a must to spice up the rice. As lot of my friends crave for this combo (along with me) when she makes this for our gatherings that sure delights them. In this curry, the Boiled Potatoes are simmered in the onion and tomato gravy along with spices, and the final touch of yogurt (Dahi / Curd) and a spoonful of coconut makes it creamy and flavorful with out loosing your spices. When the Mixed Veg Pulao is eaten with Aloo Kurma and Raita that will be the best combination and dominates any other main course on the table. Here is the recipe and Enjoy!

Aloo Kurma

Ingredients:
Potatoes - 4
Onion - 1 large
Tomato - 2 or 3
Green Chili - 2
Ginger Garlic Paste - 1 Tbsp
Turmeric powder -1 tsp
salt - 2 tsp
Red Chili Powder - 1 tsp
Coriander Powder - 1 tsp
Clove - 2
Cardamom - 1
Cinnamon - 2 ( 1 inch stick)
Cumin Seeds - 1 tsp
Oil - 1 Tbsp
Yogurt - 1/4 Tbsp
Coconut Powder - 1 Tbsp ( Optional)
Cilantro (Coriander) - 1 Tbsp (for garnish)

Method:

  1. Boil the Potatoes until they become soft and let them cool.
  2. Heat the oil in the non stick pan, and once the oil is hot add Clove, Cardamom, Cinnamon followed by Cumin Seeds. (fry for 1 min)
  3. Add the Ginger Garlic paste. Fry until the oil separates from it.
  4. Add thinly chopped onions and green chili. ( fry for 1 min)
  5. Add 1 tsp of salt and turmeric powder
  6. Once the onions are fried ( became translucent) add the chopped tomato to the pan.
  7. Close the lid and let it simmer on medium heat for 3 min.
  8. Add remaining salt, red chili powder and coriander powder to the gravy. and simmer for 3 more minutes.
  9. Now add the Yogurt (Dahi / Curd) to the pan simmer for 2 min (until the curd breaks).
  10.  mean while peel and chop the boiled potatoes into medium size. Add the potatoes to the gravy and mix well. Taste and adjust the seasonings.
  11. At the end add coconut powder and switch off the stove and close the lid and let it be on the stove for few minutes.

After 5minutes transfer it to serving bowl and garnish with some cilantro (coriander leaves) and Enjoy with your Mix Veg Pulao or Jeera Rice or Coconut Rice.

This goes very well with your chapati / roti also. Next day I roll the left over curry into some tortialls, that makes my breakfast on the go ready. Now, that's smart right :-).

My Notes:

  • In Some recipes, the yogurt will be added after the potatoes are added. But My mom adds it before so that the gravy will be balanced with creaminess and later the potatoes will be coated with all spices evenly.
  • I suggest boiling the potatoes in pressure cooker. For this curry they have to be very soft and mashed up.
  • Adding coconut powder is optional. If you don't like it you can avoid it.

While you enjoy these, I will be back with some more dishes.
until then take care and enjoy the night with your family.
