Raw Papaya, Apple, Carrot Salad

Happy Mother's Day to all the Mothers out there! Today the whole world must be celebrating the Mother's day, actually I don't being buy into these Mother's day concept as such,  i believe we don't need a special day to remember our mother or appreciate her love, in fact when ever we get a chance (or should take a chance) or every day we should do that. But at the same time I am not against it also, it is okay to have a special day to treat her at least we can  spend a day with her (or even think about her) in our busy lives. Most of us are far away from our mothers and are not at the luxury of being with her, but we can make something that adorns a smile on her face. Today I have prepared this beautiful,  bright and healthy salad for my mom, and sending it virtually. (I know she must be smiling while reading this post) I wish I was there to prepare this for you, Mom! Happy Mother's Day. Enjoy!

Raw Papaya, Apple, Carrot Salad

Ingredients:
Raw Papaya - 1/4 ( medium)
Apple - 1/2
Carrot - 1 medium
Almonds - 1 Tbsp
Raisins - 1 Tbsp

For Dressing:
Honey - 1 tsp
Lime Juice - 1 tsp
Olive Oil - 1 Tbsp
Salt - 1 tsp
Black Pepper - 1 tsp

Method:
Peel and seed out the Raw Papaya and Apple. Peel the Carrot. Chop all the vegetables in match stick like length. And add them to the wide bowl. Chop almonds and raisins coarsely and add to the bowl.

In a small bowl, add oil, salt, black pepper and whisk together. Add Honey and Lime Juice and mix well. That makes your healthy dressing.

Pour this dressing on top of the salad and toss it together. Chill in the fridge until before serving.

While serving take some amount of salad pile it like a mountain and pour 1 tsp dressing ( on top), that gives you that glazed looks. (this is the restaurant style tip)



Tips:

  • Cutting the vegetables and fruits like match stick is the critical thing in this recipe. you don't believe, in some recipes the size and the style of chopping adds the taste. this is one such recipe. :-)
  • If you don't like chilled, it is alright to sever at room temperature. (Chilling makes the salad infuse with all the spices in the dressing.)
  • if you have slivered almonds (thinly sliced), that will be perfect for this to match the vegetable cut.
