Tropical Salad with Baked Tilapia

In salads Tropical salad  is one of my favorite, the mix of tropical fruits and nuts makes this salad special and unique. Here is the recipe for you Enjoy!

Ingredients:
Tilapia Fillet - 1
Mixed Green Leaves - 1 Cup
Mango Cubes - 1/4 cup
Cashew Nuts - 1 Tbsp
Dried Cranberry - 1 Tbsp
Shredded Carrots - 1 Tbsp
Cucumber Cubes - 1/4 cup
Black Beans - 1 Tbsp
Sweet Corn - 1 Tbsp
Tomatoes ( cubed) - 1/4 cup
Red Onion  - 1/4 medium

Baked Tilapia:
Mix 1 tsp salt and 1/2 tsp pepper, 1/2 Paprika (Red Chili Powder) in 1 tsp Oil. Brush this on the Tilapia Fillet evenly and bake it at 350 F for 25 minutes. Once it is done take out the sprinkle 1 tsp of fresh lime juice.

Homemade Salad Dressing:
Take 1 Tbsp of Olive Oil in a bowl, add pinch of salt, 1/2 tsp of black pepper, 1/4 tsp of red pepper flakes, 1 tsp of lime juice and1/2 tsp of honey. whisk all the ingredients together well.



Preparation:
1. Take a Big salad bowl and add Mixed Green Leaves to it.
2. Add Mango Cubes, Cucumber, Black Beans, Corn, Tomatoes Shredded Carrots and thinly sliced Red Onions
3. Add Cashew Nuts and Dried Cranberries
4. Toss all the ingredients very well.
5. Pour the Salad Dressing on the Salad and toss them very gently.
6. Serve the salad in the Plates and top with Baked Tilapia
7. This Light and Lean salad is ready for your Yummy Tummy!!
8. Enjoy this Healthy dinner with your whole family.

Serving Tip:   Veg Lovers you can replace the Baked Tilapia with Curried Tofu or eat the salad as it is, as the nuts and black beans will do justice to your protein servings and keeping you full.
