Cucumber Raita

Any spicy rice dish like Pulao or Biryani does not sound cool enough with out the side of raita. Raita is a cool Indian Condiment made with yogurt (dahi) mixed with herbs and seasoned with some spices. As this is made  with un-cooked ingredients can be considered  as one of the Raw Recipes. This will be a best companion for your spicy rice dishes or goes very well with your rotis also.

Cucumber Raita



Ingredients:
Yogurt ( Dahi) - 1 cup
Red Onion - 1 small
salt - 1 tsp
black pepper - 1/ 4tsp
Green chili - 1 or 2
Cucumber - 1 medium

Method:
Dice the onion into very small pieces. Peel the Cucumber ( seed out if you have very thick seeds) and cut into small cubes. Chop the Green chili into small circles.

Take the curd (yogurt) in a medium bowl and whisk it very well so that it becomes like creamy with out any lumps. Add salt and black pepper and mix it well. Add all the chopped vegetables and mix it gently and very well.

Now you can garnish with some cilantro or grated carrot to add more color to this cool raita. Chill in the fridge until before serving. and Serve with any spicy dish on your plate.

Tips:
  • Before you add cucumber taste it first, some time cucumbers can be bitter. 
  • Black pepper is my secret ingredient to add some zest.
  • If you don't like spicy version, you can avoid the green chili.
