Watermelon Gazpacho
Gazpacho is a tomato-based, raw vegetable soup traditionally served cold (according to Wiki source) and it is a Spanish based recipe and very popular in south america, I have seen several colorful Gazpacho recipes before but never made one, But today that watermelon I got a week back, sitting in fruit basket spur me to make something exciting. Though my kids love to eat watermelon as wedges, the huge amount of this fruit always makes me try different variations not to leave any left overs. Previously I have made Watermelon Salad for those hot summer days, and today I have tried this Gazpacho with Watermelon and loved this flavorful cold soup, and it feels like having the spiced up cool fruit in every sip. The key for this tasteful soup is balancing the flavors and spices properly. Here is the recipe, Enjoy!
Ingredients:
Watermelon - 2 cup ( cut-up)
Tomato - 2 (cluster tomatoes are best)
Green Bell Pepper ( Capsicum) - 1/2 medium
Garlic - 2 cloves
Mint - 1 Tbsp
salt - 1 tsp
black pepper - 1/2 tsp
lime juice - 1 tsp

Take care until i come up with one more recipe..
- Reserve 1/4 cup of watermelon.
- Take the remaining watermelon and blend it in the blender. Add the chopped tomato, green bell pepper, crushed garlic, mint and blend it for 1 minute (or until it becomes like puree). Then Add salt and pepper and pulse. Taste and adjust all the seasonings.
- Take this to serving bowl and squeeze the fresh lime juice and Chill this in the refrigerator for 2 to 3 hours.top with reserved diced watermelon cut-up and mint leaves.
- Serve this with some reserved diced watermelon cut-up and mint leaves on top.
Tips:
- You can make several variations in this watermelon gazpacho. As long as you add some spice to it.
- Instead Green Bell Pepper, you can use 1 jalapeno and red bell pepper.
- For more spicy version you can add 1/2 tsp paprika or 1 tsp of chipotle sauce.
- this goes well with the side of garlic bread or will be good on creamy mashed potatoes.
