Baby Zucchini Bajji is a Bliss for sure
When I went to grocery store these cute little baby zucchinis attracted me so much, the first thing that came to my mind is 'మిరపకాయ బజ్జి' .Though I am not a great fan of fried food (to cook), I always want to make 'మిరపకాయ బజ్జి' but won't find the proper chillies that suits for this mouth watering snack. And when ever we eat 'మిరపకాయ బజ్జి' my kids will ask me but because of the spiciness i refuse them to try or I have to make them eat just the outer part. So I want to try 'Baby Zucchini బజ్జి' where the whole family can enjoy this traditional style snack yet packed with nutrients.
Ingredients:
Baby Zucchini - 12
Graham Flour - 1/3 cup
All Purpose Flour ( Maida) or Rice Flour - 1/3 cup
Baking Soda : 1/2 tea spoon
Salt: 1 tea spoon
Red Chilli Powder: 1/2 tea spoon
Coriander Powder: 1/4 tea spoon
Curry Leaf Powder: 1/4 tea spoon
Black Pepper: 1/2 tea spoon
Olive Oil: 1 Tea spoon
Canola Oil / Vegetable Oil : Enough For Frying

Canola Oil / Vegetable Oil : Enough For Frying
Preparation:
- Wash the baby zucchini and pat dry them. make thin scars with a knife on zucchinis. Do this very carefully as the baby zucchini will be very tender.
- Mix the black pepper in olive oil and brush the zucchinis with this seasoning. the easy way to do this is mix the seasoning in the shallow dish, and then place zucchinis in this dish and roll them evenly so that the zucchinis will be coated with the seasoning. Keep this aside. this will make the zucchinis to infuse the black pepper spice.
- Take enough oil into the kadai/pan ( up to 3/4 of the pan) and place it on the stove and put the flame.
- Mix the Graham Flour and Maida Flour by adding water little by little until the smooth batter forms. Then add the salt, chiili powder, coriander powder, baking soda, curry leaf powder and mix it well into the batter.
- Put little drops of the batter into oil to make sure the oil is hot enough for frying.
- Drop all the zucchinis into the batter.take the one zucchini at a time from the batter and make sure zucchini is coated with the batter evenly. slowly add the zucchini to the oil in kadai/pan. in every batch you can add 4 to 5 zucchini to the kadai/pan. fry them evenly. take them out put in the colander so that the extra oil will come out from zucchinis.
- Once you are done with frying all the zucchinis in batches, again place all the zucchinis in the kadai and fry for 2 to 3 minutes. This gives nice second coat and will make the బజ్జి crispy and tender. and this will take out the flour smells form బజ్జి and makes it lasts longer.
- Place all the Baby Zucchini బజ్జి in a plate and sprinkle chopped cilantro and mint leaves.
- Yum! Yum! Yum! you are 2 minutes away from the 'Baby Zucchini Bajji Bliss'.
Enjoy this snack with your entire family. Unknowingly your little ones will be stuffed with 2 to 3 servings of vegetables with this snack.
Serving Tip: As these won't be spicy as 'మిరపకాయ బజ్జ' You can serve these with any రోటి పచ్చడి like Tomato Chutney or Indian Squash (సొరకాయ) Chutney for adults or spice lovers.
Hint: I have added coriander powder and chiili powder to the batter to add some spice to this snack. We don't add this in the traditional snack as Chillies will do justice for making it spicy.
