Spicy Sweet Potato Scrambled Egg

Today I am just browsing at my pantry and refrigerator thinking about what an Yummy breakfast I should make this morning.  After a lot of cheesy Super bowl snacks yesterday night,  Today I am really craving for something spicy in my breakfast. So I was thinking about scrambled egg but with a twist of spiciness. Always I blend some greens or vegetables in my scrambled eggs. Scrambled Egg with Roasted Potatoes is my all time favorite. But I have replaced the potatoes with sweet potatoes (to add some healthy flick) to add more color to it. Here is the recipe. Enjoy!



Ingredients:
Sweet Potato - 1 medium
Egg - 1
Green Chilies  - 1
salt -  1 tsp
black pepper - 1 tsp
Curry Powder - 1 tsp
Cilantro - to Garnish
Oil -  1 Tbsp


Preparation:
1. Wash and Pat dry the Sweet Potato. Trim the edges and cut into small  cubes.
2. I leave the skin on for more fiber (that too natural) in my breakfast. If you don't like the skin, peel it off.
3. Heat oil in the non stick pan.
4. Add the Sweet Potato and let it fry on high for 1 min and then low for 3 min.
5. Add the curry powder mix it well and Take it from the pan and keep it aside
6. To the same pan add the whisked egg  along with chopped green chili and scramble it. Add salt and black pepper.
7. Once the egg is cooked fully add the roasted sweet potato.
8. Mix the egg and vegetables well and fry it for 2 min
9. Sprinkle the Cilantro on top and turn off the stove.
10. Serve into a plate and sit back and enjoy your Protein Filled Breakfast.

Hmmmmm! Look at the Colorful Breakfast Platter!!! 

Yum! Yum! Yum! Add some apple slices to serve your fruit. I am sure you won't get hungry until lunch now. Enjoy!

Nutritional Info: 
This breakfast is full with proteins ( 6g), carbohydrates and fiber.

Hint:
  • If you are not spice lover you can reduce some heat by eliminating green chili.
  • If you eliminate the curry powder you will miss something, because curry powder enhances the flavor of sweet potato.
