Guddu Vepudu ~ Masala Boiled Egg Fry

Today we are entering into May, it's the month of Mother's Day and peek summer. To suit this theme this month I will be featuring some of my mom's recipes that are my favorites and some chilled delights to cool a bit in this summer. So get ready for the summer fun with your mum (or her recipes). :-)

Masala Boiled Egg Fry



My mom is a vegetarian by choice and does not eat chicken or eggs. After she married to Dad, to satisfy his hunger for chicken, she has started cooking chicken and Eggs. She does make very few varieties with these, but they are the best and pretty popular in our family and relatives.  Masala Boiled Egg Fry and Chicken Fry are on top of such list. Whenever she makes these, she makes it perfect with the same taste and texture (with out following any recipe..) every time.

When Chicken does not happen in my home on Sunday, at least i make sure that this Masala Boiled Eggs will be brought to our table. And also this is such a easy peasy dish with less ingredients and some times it will be part of my rescue menu's as well. Thank you Mom, for showing me such a nice recipe!!! This is a top recipe at my home as well, VJ loves these spicy eggs any time and kids enjoy this with no complain ( i make sure i serve very little masala to them, though). Here is the recipe Guys, Enjoy!

Ingredients:
Eggs - 6
Onions - 3 medium
Green Chili  - 5
Oil - 1 tbsp
Cumin Seeds - 1 tsp
clove - 2
cinnamon - 1 or 2
salt - 2 tsp
turmeric powder - 1 tsp

my Garam Masala Powder -  1 Tbsp

Method:

  1. First boil the eggs until they become soft and cooked fully. Remove the shell and cut into halfs and make them ready. 
  2. Chop the onions in thin and long slices ( this is key thing for this recipe). Chop the Green chili length wise.
  3. Heat the oil in non-stick pan. once it is hot, add clove, cardamom followed by cumin seeds. fry for 1 min.
  4. Add Green chili and onion slices to the pan. Saute them for 2 minutes and Add salt and turmeric powder.  Mix it well and fry the onions on medium heat until the oil separates from onions. ( it takes about 10 minutes) . Add Garam Masala Powder and mix it well and saute for 5 more minutes. 
  5. Now make some space in the center of the pan and Add the halved eggs to the pan. ( yellow should touch the pan). after 3 minutes, carefully turn the egg halves so that white touches the pan. Cover with the onion masala and let it cook for few minutes.


Once the curry comes together, Switch off the heat and transfer into serving bowl. First transfer the eggs and cover it with onion masala and garnish with some mint or cilantro leaves.

This goes very well with white rice or compliments the best with Tangy Tomato Rice or Creamy Coconut Rice. My mom's favorite combination is Tomato Rice and this Masala Eggs ( to serve us, not for her). She always insists me to make these eggs when ever i make tomato rice to serve the crowd or my family. This is one of my sister's favorite too, when ever she visits me I make this combination for her.

Tips:
  • Chopping the onions Long and Thin is the key step and determines the taste.
  • You can quickly make the garam masala powder by using my recipe or use the store bought one, if you use store bought one, then use 1 tsp of masala and 1 Tbsp of dry coconut powder.
  • Frying the onions on low heat takes little patience, be patient the results are worth.

  • First frying the eggs on yellow makes the yolk intact with the white and does not get separate later.
