Mexican Skillet Rice ( Quick Fix )

VJ and myself both have the habit of taking lunch box to work. I don't like driving around for lunch when my tummy gets rumbled by afternoon after having busy morning at work. At my work place we don't have the luxury of cafeteria option yet (heard in our new building there will be one, waiting...), VJ has nice cafeteria at work, but again nothing is more convenient when a fresh homemade lunch (packed with love ;-)) is waiting for you at your desk!  I always seek variety in every aspect, when it comes to Lunchbox no compromise at all! Usually I make quick fixes for lunch boxes like rice dishes with left over rice or yummy wraps with left over curries. The first option comes to my mind is Fried Rice when there is a left over rice, these days I am making Mushroom Masala Rice quite often too. But today I wanted to try something different and gave a Mexican make over to the left over rice. This is certainly a quick fix, can be done under 15 minutes.  Here is the recipe, Njoy!


Ingredients:
Cooked Rice - 1 cup
Black Bean, Corn Mix - 1/2 cup ( frozen)
Jalapeno  - 1
Paprika- 1 tsp
salt - 1 tsp
cilantro - 1 Tbsp
Oil - 1 tsp
Tortilla Chip strips - (optional)

For Chicken Addition:
Chicken Patty - 1 Frozen
Spicy Chunky salsa - on the side (optional)













Method: 

  1. Heat the oil in non-stick pan. Once the oil hot, add the chopped Jalapeno. 
  2. Add Rice to the Pan and give it a quick stir. Add salt and paprika and mix the oil and spices well with rice. 
  3. Thaw or microwave ( 1 min) the Southwestern Black Bean Corn Mix. Add this mixture to the rice in the pan. Mix it well, and cook for 3 min. 
  4. Top with Cilantro, cook for 2 more min and turn of the heat. While Serving serve with Tortilla Strips on top to add some crunch!


For Non-Veg Lovers: 
Microwave the Chicken Patty according to directions and make sure it's well cooked. Chop the patty into small cubes and top with Chunky Salsa and serve as the side for your Mexican Skillet Rice.
