Perfect Pound Cake

This is a very simple yet superb recipe to get a Perfect Pound Cake. The ingredients are very minimal and in small portions to get the small size cake ( but still i got a Bundt Pan full Cake), as you will have all these ingredients ever-ready in your Pantry, you don't find any excuse to make this cake.
Perfect Pound Cake

My kiddos snack box cheered them as it is full of this Pound Cake for the nest 2 days (I anticipated for 1 week but it didn't last that long,  yes it was Ymmmieee!). This is better than those store bought rice crisps or any other snacks that I pack. I allowed my kids to help me while beating the batter for this cake and they were so proud of them when they looked at the soft and sponge looking Pound Cake at the end! This is a keeper recipe and I warn you this will be Addictive and watch out! :-) Enjoy!

Ingredients:
Adapted from : Martha Stewart Recipes

Unsalted Butter - 1 cup ( 2 sticks)
All Purpose Flour ( APF) - 2 cups
Sugar - 1 cup
Eggs - 4
Vanilla Extract - 1 tsp
kosher salt - 1/2 tsp
baking soda - 1/2 tsp

Method:
  1. Pre-heat the Oven at 350 F.
  2. Combine the APF, Salt and Baking Soda in a medium bowl. And sieve it so that salt mixes well with flour making it airy.
  3. Whisk the Butter in a large bowl. And add sugar to it and whisk for 30 strokes. It will be very fluffy.
  4. Add Eggs one at a time and keep on whisking it ( remember the more fluffy the batter the more soft is the cake) . Add Vanilla Extract and mix it well.
  5. Now add the dry ingredients to the Bowl and mix it well. ( First it will be very dry, don't panic, keep on mixing with beater and you will see slowly the flour dissolves into batter and again you will get same fluffiness as before in the batter).
  6. Butter the Bundt Pan or Bread Loaf Pan ( 9 in). Pour the batter into Pan and smooth-en the top by spreading the batter evenly. Bake for 1 hour . ( keep watching after 50 min, and make sure the top is not getting burnt).
Take a Look at the Fluffy Batter!

Notes:
  • Keep the Butter at Room Temperature
  • If needed tent with Aluminum Foil on the Cake Pan, to avoid the burning on the top portion.
