Moist Carrot Cake

Recently I have totally indulged with the Bake Sale experience to raise Charity with my Chocolate Avocado Cupcakes. Before that excitement cooled off another Bake Sale event happened at my work MedAssets. Were you thinking If I have stepped into it again, you Bet? This time I was planning to try a Healthy and less sugar version as this charity is related to Diabetic group. I have searched through several recipes and settled with this Moist Carrot Cake Recipe from Nags space. This got little spice touch in it, so should be a 'Go To Cake' for southern folks! As several of my colleagues are Texans and from South, this cake has been well received at the Bake Sale. And this time I had this Carrot Cake and Chocolate Avocado Cupcakes at my stall and total we have raised 30 USD with my baked goodies. Whoo Hooo! I am glad to be part of this charity event and now planning to participate in many more in near future!
Carrot Cake
This recipe got less flour, as almost 1 cup of flour will be substituted with grated carrots compare to normal cake measurements. So take a break from your routine cake and get twisted with this Healthy Carrot touch in your cake. Here is the recipe, Njoy!

Ingredients:
Adapted from : Edible Garden

All Purpose Flour - 1 cup
Baking Powder - 1 tsp
Baking Soda - 1 tsp
Ground Cinnamon - 1/2 tsp
salt - 1/4 tsp
All Spice - 1/2 tsp ( you can alternate with NutMeg Powder)
Eggs - 2
Vegetable Oil - 2 Tbsp
Sugar - 1/2 cup
Brown Sugar - 2/3 cup
Milk - 1/4 cup
Grated Carrots - 1 1/2 cups
Walnuts - 1/2 cup ( optional)



Method:

  1. Preheat Oven to 350F /180 C. Butter and flour a cake pan. 
  2. In a medium bowl mix the flour, salt, spices, baking powder, baking soda and set aside.
  3. In a Large bowl mix Oil, Milk, whisked eggs until well blended. Now add Sugar and Brown Sugar mix with electric mixer until well combined. 
  4. Add the flour mixture to the egg mixture and mix until flour dissolves. Now Add in Carrots and Chopped Walnuts ( if using) and gently  Fold in. (Do not mix with mixer at this point.)
  5. Pour this into the prepared pan and Bake for 40 minutes.
  6. Take it off from the oven and let it completely cool about 15 minutes. Cut into pieces and serve it when it is warm.
As this is for Diabetic event I haven't added any Frosting on top. You can try any Cream Based Frosting on top like Cream Cheese or Vanilla Frosting.

Notes:
  • After mixing all the ingredients the batter will be more liquid consistency (which is not the case with normal cake). I was little worried how it will turn out and even got doubts if I have followed the measurements correctly. At the end the cake turned out beautiful and firm. So if you are like me, then take it easy follow the measurements and let the oven take care of it's job with no worries.
  • The color of this cake will be decided by Carrots you use. Pick the tender and bright color carrots for this cake.
  • You can grate the carrots for this recipe, to get more more flaky carrot efforts in your cake. Or if you are in rush just grind it in food processor or mixie jar roughly or coarsely. Do not make it a Puree though. 
  • As I did not have walnuts handy I haven't used in the recipe, but did not miss anything. But if you do have walnuts I suggest definitely add to the recipe, as nuts enhances the spices in this carrot cake.
