Shrimp on Skewers

I made these 'Shrimp on Skewers' first time for a potluck at work. I have prepared the marinade from scratch in this recipe, shrimp got marinated over night and got grilled up to perfection and served hot at the potluck. The recipe is so simple but got raving reviews from my colleagues. So this is a keeper for my future reference, as my son's love for shrimp started growing. Here is the recipe for you, Njoy!

Ingredients:
Shrimp - 40 ( tail off and half cooked) ( i used frozen shrimp from Costco)

Marinade:
Lime juice - 1/4 cup
Ginger garlic paste - 1 tsp
Turmeric - 1 tsp
salt - 1 tsp
Red Chili powder - 1/2 tsp
Coriander powder - 1/2 tsp
Cumin powder - 1/4 tsp
Cilantro - 1/4 cup
Mint leaves - 1/4 cup

Method:
  1. I have used the tail off and half cooked frozen shrimp variety for this recipe. Thaw the shrimp for 30 to 60 minutes.
  2. Mix all the ingredients under marinade section in a medium bowl. Pour mixture into a ziplock cover.
  3. Add shrimp to the ziplock cover, close the zip and mix it well with marinade, so that shrimp get covered with marinade mixture all sides. Keep this ziplock in the refrigerator over night.
  4. Next day morning, take it out right before grilling, insert each shrimp on to skewers and grill these for 5 min on each side. If shrimp are drying out, brush with olive oil when they are on grill.
  5. Serve these as it is or take them out to a plate and serve with Salsa on the side. Kids will have fun to eat shrimp right from the skewer.

Will be back with another summer recipe,
Happy Cooking and Stay tuned until next time!

Turmeric Powder - 1 tsp
Lime Juice - 1 Tbsp
Salt - 1 tsp
Oil - 3 Tbsp
Cilantro  - for Garnish

Preparatory Steps:
  • Take out tails and any extra viens out of shrimp. Wash and drain shrimp.
  • Take a small medium bowl, add lime juice, add turmeric powder, red chili powder and salt. Mix it to make like marinade.
  • Rub this marinade on all over the shrimp and keep it aside for 30 min with closed lid, so that shrimp gets marinated well.
Method:
  1. Heat 3 Tbsp oil in a shallow non-stick pan. Once the oil is hot add marinated shrimp and fry for 7 to 10 min until shrimp gets cooked and wilted.
  2. Switch off the stove and take shrimp to wide plate and tap with kitchen towels to remove excessive oil.

Tempting to try, isn't it!

Notes:

  • I have used frozen shrimp for this recipe. I have thawed shrimp for 1 hour before starting prep for this recipe.

Dosakaya Royyalu ~ Shrimp Dosakaya Curry

I heard from some of my friends several times about Royyalu ( Shrimp / Prawn) and Dosakaya combination. I always wanted to try that combination. Usually I don't make shrimp because of it's smell. But recently my son developed interest for Shrimp, so I am trying several shrimp varieties these days. That makes Vj happy too who is ardent lover of Shrimp! :-) In this curry Shrimp is coated with Masala and gets simmered with Dosakaya which gives slight sourness to this curry making spices to settle and enhancing the flavor of Shrimp. Here is the recipe, Njoy!

Ingredients:
Shrimp - 20 count (Tail Off and Semi Cooked)
Salt - 1 tsp
Turmeric powder - 1 tsp

Dosakaya - 1 small
Onion - 1/2 onion
Green Chili - 2
Oil - 2 Tbsp
Cumin Seeds - 1 tsp
Ginger Garlic Paste - 1 tsp
Salt - 1 tsp
Red Chili Powder - 1 tsp
Coriander Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Coriander / Cilantro - for Garnish

Preparatory Steps:

  • Wash Shrimp under lukewarm water; drain and take them in a bowl. Add salt and turmeric powder and coat shrimp well.
  • Now boil the shrimp on low to medium heat until all the water from the Shrimp evaporates making the shrimp to become smaller and wilted. It takes at least 15 min.
  • Peel Dosakaya and de seed, and chop into small cubes.

Method:

  1. Heat the non-stick pan and add oil to it. Once the oil is hot add cumin seeds.
  2. Add chopped onion and green chili to the pan and mix it well with oil and saute for 2 min. Add Ginger garlic paste to the pan and mix with onions and green chili. Close the lid and simmer for 2 more minutes.
  3. Now add cooked Shrimp to the onion mix, give it a stir so that Shrimp is mixed with onions. Close the lid and simmer for 5 minutes.
  4. Add chopped Dosakaya cubes to pan. Mix with Shrimp and Onion mix. Add salt, coriander powder, red chili powder and mix spices well with shrimp.
  5. Add 1 cup of water to the pan and close the lid and simmer on slow to medium heat for 10 min.
  6. After 10 min, taste and adjust the seasonings, add Garam Masala as needed.
  7. Mix everything well and Switch off the Stove, Transfer to Serving Bowl and Garnish with Cilantro.

Notes:

  • It tastes grate with White Rice.
  • If the curry becomes too spicy, you can add 1 tsp lime juice at the end to curry.
  • Some people leave seeds in Dosakaya as it gives some more sour taste to curry. It's your choice to use seeds or not. I don't use seeds as they are uncomfortable under teeth.

Shrimp Tomato Masala

Hello Readers, Howz every body! No, no I am not on a break, was actually busy with my daughter's Birthday Party celebrations who turned 5 yesterday. And of course I had my pleasure on exclusive gal's trip to Las Vegas too.  This summer Abhi and Anvi had loads of fun being home and spending time with Grand Parents. It's best summer for me, it's contempt feeling when your kids are spending time together sharing lot of memories with their conversations ( yes, I was secretly listening to them) and having bonding time with Grand Parents.
Shrimp Tomato Masala
Today I am going to present another Shrimp recipe. The specialty of this recipe  is, that it comes from my mom-in-law's kitchen. Vj always cherishes Chicken Dishes, Fish and Shrimp Dishes that are made by his mom. I have mastered Chicken Dishes in my own style, but never got my hands on Seafood dishes. So this summer I have learnt some tricks from my mom-in-law ( of course to impress my dear hubby)! And here is the result of that learning, Njoy!

Ingredients:
Shrimp -  medium size ( 50 count) ( skin off and tail off)
Onion - 1 medium
Green Chili - 1 ( long)
Tomato - 1 Big ( Cluster, Juicy)
Cumin Seeds - 1/2 tsp
Turmeric Powder - 2 tsp
Ginger Garlic Paste - 1 Tbsp
Garam Masala Powder - 1 tsp
salt - 2 tsp
Red Chili Powder - 1 tsp
Coriander Powder  - 1/2 tsp
Cilantro - for Garnish
Oil - 1 Tbsp

Preparatory Steps:
Wash shrimp by keeping them under lukewarm water. Take a medium wide bowl add shrimp in it. Add 1 tsp salt and 1 tsp turmeric powder and mix well gently. Keep this on stove on medium heat. Lot of water will come out of the shrimp and leaving the shrimp wilted and firm. This process will take 10 to 15 minutes. Be Patient while doing this process as this process is critical  to process the shrimp for 2 reasons. One to get shrimp well coated with spices Two, the raw shrimp smell goes away.

Before  heating up...                           Wilted and Dry
Method:
  1. Heat the non-stick pan on medium flame, add oil to it. Once the oil is hot add cumin seeds. As they starts spluttering add ginger garlic paste.
  2. You notice the oil separates from Ginger Garlic paste then add chopped green chili and onion slices. Saute them for 2 min. Add 1 tsp salt, 1 tsp turmeric powder and coriander powder. Saute onions along with spices for 2 more min.
  3. Now add chopped tomato to the pan mix well with spices and close the lid. Let it simmer for 5 min. Now open the lid and add red chili powder and mix well. Add cooked shrimp to the gravy and mix well with onion and tomato mixture. Let it cook for another 5 min.
  4. Now you notice the curry comes together, then add Garam Masala Powder. Taste and adjust any seasonings. Finally switch off the stove and transfer it to a bowl and garnish with Cilantro.
Serve hot with Creamy Coconut Milk Pulao or White Rice.

This is a total contrast of the prior Shrimp recipe i posted Coconut Cilantro Shrimp. This is little tangy and spicy and gravy curry that goes well with the rice.

Take a close peek....!

Hope you have enjoyed today's recipe.
I loved having you, please come back soon to witness another new recipe.
signing off  for now...

Coconut Cilantro Shrimp

I think this is my first shrimp recipe that I am posting here. It is true that i rarely cook shrimp as I have aversion to seafood because of the smell. But when i came to know that it's VJ favorite for the first time, then i dared to cook the shrimp. For some reason, seafood seems like still alive to me, call it my imagination or craziness, but that's how i feel (that's why i said Dared to cook) . Because of that also while marinating sea-food i use spatula than my hands to mix it. (anyways it's little secret, my odd feelings about seafood, so just keep it in between you and me...)!  Coming to recipe, This is a simple recipe that can be fixed quick but with out convincing on the spicy flavors. Shrimp gets mixed with slowly simmered cilantro onion mixture and the touch of coconut gives an amusing taste to spicy shrimp in this stir -fry. Tongue tickling... Here is the recipe, Enjoy!

Coconut Cilantro Shrimp
Ingredients:
Shrimp - 1 cup ( medium size, semi cooked and tail off)
cumin seeds - 1/2 tsp
ginger garlic paste - 1 tsp
onion - 1/2 medium
green chili - 2
Cilantro - 1/2 cup
Coconut Powder - 2 Tbsp
salt - 1 tsp (according to your taste)
turmeric powder - 1 tsp
Red Chili Powder - 1/2 tsp
Coriander Powder - 1  tsp
Lime juice- 1 tsp
Oil - 1 Tbsp

Take a close peek - it's drool worthy...

Preparatory Steps:
First thaw the frozen shrimp. Wash with warm water and drain them completely.
Take a non-stick pan and add the shrimp. Mix 1/2 tsp salt and 1/2 tsp turmeric powder to the shrimp.
now heat the non-stick pan until the shrimp becomes small and wilted. You have to stir occasionally.

Salt make the water oozes out from shrimp and you have to stir until all that water goes away. stir it occasionally to make the shrimp not touch the bottom, until all the water goes away. This needs little patience (esp for me). (it took me about 10 min).

Method:
  1. Heat the Non-stick pan and add oil. Once the oil is hot, add the cumin seeds. Once they start spluttering, add the ginger garlic paste.
  2. Add chopped green chili and onions. Once the onions are sauted, add cilantro and mix it well until it mixes with onions. Now Add salt, turmeric powder, red chili powder and coriander powder.  Keep the flame to low and simmer for 4 to 5 min. (until the cilantro infuses the onion mix.)
  3. Now add the cooked shrimp to pan. and Stir-fry along with onions and spices, well. ( 4 to  5 min)
  4. Taste and adjust all the seasonings. Now add the grated coconut powder to the shrimp and stir fry for another 2 min.
  5. Switch off the stove and Transfer it into Serving Bowl and squeeze the lime juice on top.

This sounds yumm when you serve hot with white rice or vegetable pulavo.

Notes:
I have used frozen shrimp in this recipe, you can make the same with fresh shrimp also.

will be back with one more recipe...until then take care
