Spicy Sweet Corn Chat

Sweet Corn (Raw) - 1 cup
Red Onion Chopped - 1/2 cup
Tomato Chopped - 1/2 cup
Green Chili - 1
Cilantro Chopped - 2 Tbsp
Lime - 1
Red Cabbage ( optional) - 1/4 cup
Chopped Almonds - 2 Tbsp
Sev or Aloo Bhujia ( Halidiram's) - 1/4 cup
salt - 1/2 tsp
black pepper - 1/4 tsp
coriander powder - 1/2 tsp
Method:
- Boil the sweet Corn in the water with the little added salt for 10 min. let it cool for 5 min.
- Chop the almonds also and set them aside.
- Take a wide bowl and start mixing the raw vegetables in the order red onion, red cabbage, sweet corn, green chili, tomato. Then add 1 tbsp of cilantro and mix it well.
- Add salt, black pepper and coriander powder and mix it well.
- Then add chopped almonds, now taste little bit and adjust the seasonings.
- Squeeze the lime juice (half lime) into the mixture in the bowl. toss the mixture gently in the bowl.
- Serve it into individual bowls, top with 1 tsp of Sev or Aloo Bhujia, and garnish with Cilantro and squeeze 2 drops of lime juice on top.
1. if you don't get raw sweet corn, you can replace with Frozen corn, then microwave for 1 min in the water.
2. I have added red cabbage as it is there in the fridge and handy, while it adds color and crunch. If you are not a fan of cabbage, skip this with no doubt.
3. When you are eating vegetables raw, cutting them into the very thin and small pieces makes it inviting, while hiding the raw smell.
4. Almonds are my protein source in this snack, you can use cashew or peanuts. if you are allergic to nuts then skip it.
5.Coriander powder is the chat kick in this recipe and it is vital.

Cajun Corn Wheels
- First remove the husk around corn and trim the stems at bottom. Cut corn into 2 inch rounds
- Take a big pot, fill half with water, add 1 tsp salt. Add corn rounds to pot and boil for 10 min.
- Take out corn rounds from boiling water and set on a platter aside.
- Heat wide non stick pan and add butter to it. Once butter is melted add chopped cilantro to it and mix well.
- Add Cajun spice, black pepper, paprika, brown sugar to pan, mix all the spices with butter. Add boiled corn rounds to pan, toss it until corn wheels are coated with all spices. Switch off the stove and squeeze 1/2 lime on top of corn.
- Transfer to wide platter/bowl, garnish with lime rounds and serve warm, this serves as a superb side dish on breakfast tables or at grill & chill parties.

Spicy Mushroom and Sweet Corn Rice ~ Lunch Box Recipes
| Spicy Mushroom Sweet Corn Rice |
Ingredients:
Mushroom - 1 cup
Sweet Corn - 1 cup
Left Over Rice - 2 cups
Onion - 1/3 cup ( chopped)
Oil - 1 Tbsp
salt - 1 tsp
Coriander Powder - 1/2 tsp
Spicy Paste:
Red Chili - 4
Cilantro - 1/2 cup
Preparatory Steps:
Grind Red Chili and Cilantro in small mixie grinder into smooth paste.
Method:
- Heat non-stick pan, add Oil to it. Once the oil is hot, add chopped onions to the pan. Sauté for 2 min until onions become translucent.
- Add chopped Mushroom to the pan and stir fry for 2 min until you notice mushrooms get wilted. Then add Sweet Corn and fry along with Onion and Mushroom. Add salt and coriander powder to the pan and coat vegetables well. Now add prepared Red Chili and Cilantro paste to the pan and combine well until all the veggies are coated.
- Add Rice to the pan and gently fold it up side down until rice is well combined with veggies and spices. Stir-Fry on high for 3 to 4 min, until rice starts getting browned. Taste and adjust any salt and seasonings at this point. Switch off the Stove and Serve immediately or pack in lunch box.

Broccoli and Corn Rice

Cooked Rice - 1 cup
Broccoli - 1/2 cup ( or 5 florets)
Sweet Corn - 1/2 cup
Spring Onion - 2 spears
salt - 1 tsp
black pepper - 1/4 tsp
curry powder - 1/2 tsp
Oil - 1 tsp
Preparatory Steps:
steam the broccoli florets or microwave for 1 min on high. Thaw the sweet corn and microwave for 1 min.
Method:
- Heat Oil in the non-stick pan.
- Add chopped broccoli, followed by sweet corn.
- Add salt and black pepper and mix it well with veggie.
- Add cooked rice to the pan and stir-fry for 2 to 3min.
- Add curry powder and mix it well. Taste and adjust all the seasonings.
- Top with Spring Onions and switch off the stove. Pack in your kiddo's lunch box or serve warm for evening dinner.
Tips:
- usually I make this dish with left over rice.
- this is one way to sneak veggies to your kids diet.
- I have used less spices as I made this for kids, you can increase the amount of spcies accoridng to your taste.

As Sweet Corn or Baby corn is Abhi's favorite vegetable, I try to include corn in as many dishes as possible and he enjoys too. Today I am featuring a recipe with corn which he enjoys as a morning breakfast or evening snack item. Here is the recipe for you...

Ingredients:
Whole Wheat Bread Slices - 2
Butter - 1 tbsp
Sweet Corn - 1/2 cup ( frozen)
Shredded Cheese - 1/4 cup
black pepper - 1 tsp
Method:
- Heat the Non stick pan.
- Apply the butter on one side of the bread on two slices. Toast it lightly in the pan ( on the butter side down)
- Thaw the corn in microwave or thaw them by placing in the water for 5 min.
- Add 1 tsp crushed black pepper and shredded cheese to the corn and mix it well.
- Place this corn mixture in the bread slice and top with another slice.
- Press gently and toast it on two sides on the pan.
- Take it out from the pan and cut diagonally and serve it after 5 min ( allow it to cool inside).
Sit back and enjoy while your kiddos snack on this item....Oh Yeah! That is what I did today... :-)

Vegan Corn Chowder Soup ~ Soup Recipes
This recipe is on my 'recipes to try' list from long time, actually long long time, when we visited Pier 39 in the Bay Area in California in 2014. Clam Chowder served in a sourdough bread is a popular recipe on this pier, since I am not a fan of Seafood, i couldn't dare to try any Clam Chowder on the pier at that time, but I was determined to make a Veggie version of Chowder since then. Now it is happening, I wanted to try a simple soup recipe for this Thanksgiving potluck, i made this Vegan Corn Chowder recipe, that is thick, creamy and makes it very filling, however I made it little spicy in my version, that made it a popular hit at the table for our Indian Guests. And one more thing, finally i get to use my crock pot (slow cooker) for the first time that I bought couple of years ago as part of the Thanksgiving Sale. I am so thankful for this crock pot and this recipe, where you have to keep all the ingredients in the crock pot and let it take care of itself. Loved that two pending things on my list are done #1making this soup and #2 using my Crock-pot, :-) here is the recipe for you, Njoy!
Ingredients:
Oil - 1 Tbsp
Onion - 1 medium
Cumin Powder - 1 tsp
Potato - 4 medium (Russet Potato)
Carrot - 1 medium (optional)
Jalapeno - 1 (Optional)
Red Chili Powder - 1 Tbsp
Coriander Powder - 1 tsp
Turmeric - 1/2 tsp
Oregano - 2 strands
Sweet Corn - 16 oz (frozen variety) (if you are using fresh, use 4 cups of sweet corn)
Water - 1/2 cup
Coconut Milk - 1 can (16 oz)
Vegetable Broth - 32 oz ( 1 box) ( i have used plant based broth, low sodium)
Salt - 2 tsp salt ( as per your taste)
Lime Juice - 1 Tbsp (Optional)
Preparation:
Peel and Chop Onion into medium size cubes. Peel and chop potato into medium size cubes. If you are using carrot, trim edges, peel and chop into small size chunks. Thaw frozen corn in microwave and reserve 1/2 cup of corn (to add at the end)
Method:
- Heat the non-stick pan, add oil to it. Once oil is hot, add chopped onion, jalapeno and saute for 2 min, add cumin powder, turmeric powder and saute for 2 more min
- Add chopped potato, carrot, mix with onions and close the lid let it cook until outer edges becomes soft, add 1/2 cup water, coriander powder, red chili powder and cook on medium heat until potatoes become soft.
- Add thawed corn to the pan, mix it well and cook for 5 min. After 5 min, everything becomes soft, use a potato masher and mash it nicely in the pan.
- Start the Crock-pot in High mode for 4 Hours. Transfer the contents from pan to crock pot, add oregano strands, vegetable broth, taste and adjust salt as needed and close the crock-pot lid and let it cook
- After 2 hours, add the can of coconut milk to the crock pot and give it a stir and close the lid and cook for remaining 2 hours
- Finally add reserved corn and lime juice to the pot right before serving.
- Transfer to bowl, serve warm with a side of dinner roll or your favorite bread. You can garnish with few jalapeno rounds for extra kick.
This soup is not very heavy like other creamy soups, but it is thick with loaded potatoes and has apt amount of creaminess from coconut milk, has enough warmth with lot of spice flavors. Trust me, Nobody won't say No to this soup, and your guests will go for second round for sure! :-)
Notes:
- Making this soup in crock-pot gives couple benefits, the process of slow cooking gives additional taste to the soup, and also it keeps the soup hot for longer period. (that makes it convenient avoids single serving heating separately)
- If you don't have crock pot, you can use the same recipe in InstaPot with Soup or slow cook option
- If you use russet potatoes, they cook faster and becomes soft. Otherwise, if your potatoes doesn't become soft easily with potato masher, then you can mash it in with the hand blender.
- If you want to make this soup overnight, in step#4 start the crock pot in Low mode for 8 hours, on the night before your party.
- After adding coconut milk, if you feel like soup became thick, you can add more vegetable broth until you get the consistency you want. (make sure to taste and adjust salt as needed)

recipe adapted from : Chef Sanjeev Kapoor
Ingredients:
Baby Corn Kernels - 12 to 15
Ginger Garlic Paste - 1 tsp
salt - 1 tsp
black pepper - 1/2 tsp
chat masala - 1 tsp
cilantro ( coriander leaves) - 1 Tbsp
For Batter:
All Purpose Flour - 2 Tbsp
Corn Starch - 2 Tbsp
Salt - 1 tsp
Red Chili Powder - 1 tsp
Oil - for deep frying
Method:
Make slight slits to the Baby Corn Kernels very carefully with out breaking. Add Ginger Garlic paste, salt, black pepper, chat masala and cilantro to a medium bowl. Mix well. Add the baby corn to the bowl, coat the baby corns with these masala (gently rub this on to kernels). set it aside and marinate for 15 minutes.
Mean while, mix all purpose flour and corn starch in a bowl, add water little by little and make a smooth batter. add salt and red chili powder. Heat the oil for deep frying. Once the oil is hot, dip the marinated Baby Corns in the batter and drop into oil. Fry them until they turn golden brown color. Serve them hot with Ketchup or Chili Garlic sauce!
As the name says due to Baby Corn shape, these look like cigars, though I did not buy into this name (as I hate smoking..), my son kept calling them 'Baby Corn Things', Thank God! I did n't have to explain him, about the name. These generation Kids na, are very curious and want to know the reason about everything and anything. :-).
Tips:
- To make the slits for baby corn use garnish knife. It helps not to break the baby corn.
- As this is for kids I have used less spices, you can increase the spices according to your taste.

Colorful Crostini (Under 15 mins)

Ingredients:
French Bread or Italian Bread - 10 slices
Sweet Corn - 1/2 cup (frozen)
petite peas - 1/2 cup ( frozen)
dried Cranberries - 1/3 cup
salt - 1/2 tsp
black pepper - 1/4 tsp
olive oil - 1 Tbsp
dry basil - 1 tsp ( optional)
Method:
- Pre-Heat Oven at 350 F.
- Thaw the Sweet corn and Peas in the microwave for 1 min. Take a Small bowl and, mix Corn, Peas, Dried Cranberries and add salt and black pepper.
- Arrange the bread slices on the baking sheet. Mix dry basil into Olive oil and brush the loaf (bread) with Oil.
- Add a spoonful of corn and pea mixture on to bread slice and spread it evenly.
- Place this baking sheet in the oven and bake it for 10 min.
- Once it is done (you will notice golden edges on the bread) take them out of the oven and serve them warm and have them immediately not to lose any flavor. Yummm, I know now you are ready to make another batch...these quick bites are quite addictive!
- Today I have used Italian Bread in this recipe,to make the spreading easier, I have spread the mixture on the each half ( foot long) and baked it and then sliced into 1 inch width sticks.
- If you use French Pre-sliced loaf it will be less thick than Italian bread and become more crispy and you will get defined uniform Crostini.

Ingredients:
Onion - 1 small
green chili - 3
Cabbage - 1 small
Green Beans - 1/2 cup (chopped)
Carrot - 1/2 cup (chopped)
Sweet Corn - 1/2 cup - frozen
oil - 1 Tbsp
ginger - 1 inch stick
garlic - 3 or 4 cloves
cumin seeds - 1 tsp
Turmeric Powder - 1 tsp
salt - 2 tsp
black pepper - 1 tsp
Curry leaves - 10
cilantro - 1/4 cup
Spring Onions - 1 Tbsp ( chopped)
Method:
- Chop the cabbage, onions, green chili and set aside. Thaw the american sweet corn.
- Boil 1 cup of water in the stock pot. add 1 tsp of salt.
- Add carrot and green beans once the water is boiling. After 5 min add the chopped cabbage and sweet corn.
- let them cook for 5 min. And switch of the flame and drain the vegetables.
- Heat non-stick pan and add the oil. Once the oil is hot, Add the cumin seeds, followed by ginger, curry leaves, green chili, garlic, chopped onions. Add turmeric powder and spring onions and saute for 2 to 3 min.
- Add the drained vegetables to the pan and mix them well.
- Now add salt and black pepper and stir fry them on high for 2 min. Close the lid and cook on low for 2 min.
- Add the Cilantro and mix the vegetables well and Turn off the heat.

Note:
- For this curry cutting the vegetables into very thin pieces is very important.
- Green chili and Ginger combination always enhances the flavor of cabbage.
- If you want to make it spicy, you can add 1 tsp chili powder also, before simmering.

Black Bean Brown Rice Patties ( Homemade)

Ingredients:
Black Beans - 1 can ( you can use fresh also)
Brown Rice - 1 cup ( cooked)
Boiled Potatoes - 2 medium
Red Pepper - 1/2 cup
Sweet Corn - 1/2 cup
Carrot - 1/4 cup
Broccoli - 1/4 cup
Curry Powder - 1 Tbsp
Paprika - 1 Tbsp
Salt - 2 tsp
Black Pepper - 1/2 tsp
Cilantro - 1/3 cup
Corn Starch - 2 Tbsp
Oil - 1 Tbsp
How to Make It:
1. Wash and Drain the Black Beans
2. Mash the Black beans roughly and add cooked brown rice, boiled potatoes and mix it very well
3. Add the vegetables, Red Pepper, Sweet Corn, Carrot and Broccoli. Mix it very well with beans and rice
4. Add Curry Powder, salt, black pepper and paprika.
5. Add Cilantro, Mix it very well so that bean and vegetable mixture is well infused with spices
6. Keep it a side for 30 minutes. The mixture get moist
7. Now add the corn starch and mix and mix it well until it becomes dry.
8. Make Big Rounds and Flatten it in your palm ( like thick patty size)
9. Take the non- stick pan and add oil to it.
10. Cook the patties on two sides until they get roasted.
Let them cool make your Yummy sandwich right way or store them in ziplocs and keep them in the freezer for the future use. Once you try and taste this, i am sure you won't to turn into to those store bought patties anymore.

Red Cabbage and Sweet Potato Bullets ( Step by Step)
This is such a fast, easy recipe, by the time hubby is home (from his yoga class), it's a surprise appe-teezer for him. This looked tempting, tasted yummy and very healthy (I know it's a hard combination to find it.).

Ingredients:
Sweet Potato - 1
Red Cabbage - 1 Cup
Bread Slices - 2 ( I have used Multi Grain)
salt - 1tsp
Red Chili Powder/ paprika - 1 tsp
Turmeric Powder - 1 tsp
Coriander Powder - 1 tsp
Curry Powder - 1 Tsp
Corn Starch - 1 Tbsp
Bread Crumbs - 1/3 cup ( or enough to roll the bullets)
Oil - 1 tbsp
Preparation:
1. First Boil the Sweet Potato, I have boiled ( in a bowl of water) it in microwave for 8 min. Let it cool, peel the sweet potato cut into cubes.
2. Chop the Red cabbage into thin slices ( 2 inch long). ( will be moderate for bullet shape)
3. Chop the Bread into small slices.
4. Mix all the above along with salt, paprika, turmeric powder, coriander powder. and set aside for 5 min. The salt will bring the moist from the vegetables. Again mix it it becomes like a dough now.
5. Add the Corn Starch and Curry Powder and mix it well.
6. Make small rounds and make them like logs (abt 2 inch or similar to bullet shape).
7. Take the Bread Crumbs in a wide plate and roll these bullets into bread crumbs so that all sides are coated with crumbs evenly.
8. Take a wide non stick pan and add the oil. Add these bullets to the pan.
9. Keep it on medium heat and let the bullets roast (light brown) evenly turning them on all sides.
10. Transfer them to platter and serve them hot with Tomato Pudina ( Mint) sauce.
Hint:
- I have used spices moderately, to serve as snacks for kids also. If you want much spicy adjust your spices accordingly.
- I have used corn starch and curry powder for rich texture and more flavor, which is different from the original recipe.
- If you don't have the Red Cabbage or Sweet Potato, you can alternate with Green Cabbage and Potato or Potato and Baby Spinach.

Ingredients:
Rice ( cooked) - 2 Cups
Baby Corn Kernels - 6 to 7
Thai Green Chili - 1 or 2
Crushed Red Pepper flakes - 1 tsp
Red Chili Sauce - 1 tsp
Chili Garlic Sauce - 1 tsp
salt - 2 tsp
black pepper - 1/4tsp
Oil - 2 tsp
Basil - 8 to 10 leaves (fresh)
Lime Juice - 1 tsp
Method:
- Heat Oil in the non-stick pan. Once the oil is hot, add the crushed red pepper flakes.
- Slice the green chili length wise and add it to the pan. Chop the baby corn length wise ( 1 inch sticks) and to the pan and stir fry for 2 min.
- Add salt,black pepper, Red Chili sauce, Chili Garlic Sauce. and Fry it on high flame for another 4 to 5 minutes.
- Add the cooked rice and mix it well, so that the rice is coated and sauteed with all flavors. Taste and adjust the seasonings.
- Add the chopped basil leaves to the pan and cook for another 2 min. Finally add the lime juice and Turn off the heat and Transfer it to the serving bowl.
And serve hot, this tastes good when it is hot, so serve it immediately after you made this. This will be perfect for Dinner for Two for those Friday Nights or will be good for lunch box when you have left over rice.
Tips:
- This rice is little spicy in nature. If you want less spice version, reduce the crushed red pepper flakes and green chili in amount. or in addition add Tomato Sauce (ketchup).
- Crushed Red Pepper Flakes are very important for this recipe. You don't have them handy, crush the red chilies in the mortar. (usually i save all my extra red pepper flakes seasonings that comes with Domino's Pizza :-))
- Adding the red pepper to the oil makes it spicy and will coat the rice with adequate spice. That is the secret tip in this recipe...
- Though you made this ahead, make sure you heat it up for 1 min in microwave before serving.
- I have used Sweet Basil in this recipe, you can replace that with Thai Basil also.
