Acorn Squash Masala Fry
Today I saw these winter squashes in sprouts for sale, when I said SALE, it was real cheap, they are for 60 cents. With a thought of trying some new vegetables in this new year, I have picked up Acron Squash and Spaghetti Squash. After coming home our Nanny (who is also a passionate cook) said she has a good recipe for Acron squash, and she uses the same recipe for Indian Pumpkin (గుమ్మడి కాయ / బూడిద గుమ్మడి కాయ) also. I am just portraying this recipe from our Nanny Kusuma aunty and all the credit goes to her.

Ingredients:
Acorn Squash - 1 medium
Onion - 1 medium
Green Chilies - 2
Coconut Powder - 1 Tbsp
Turmeric Powder - 1/2 tsp
Red Chili Powder (Paprika) - 1/2 tsp
salt - 1 tsp
Coriander Powder 1 tsp
Garam Masala - 1/2 tsp
Brown Sugar - 1 Tbsp (Indians can use lemon size బెల్లం / गुड )
Chopped Cilantro - 1/4 cup

Ingredients:
Acorn Squash - 1 medium

Cloves - 3
Cinnamon - 2 flakes
Cardamom - 1
Red Chillies - 2
Urad Dal - 1 Tsp
Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Curry Leaves - 4 to 5
Ginger - 1 inch stick
Garlic - 3 to 4 cloves
Coconut Powder - 1 Tbsp
Turmeric Powder - 1/2 tsp
Red Chili Powder (Paprika) - 1/2 tsp
salt - 1 tsp
Coriander Powder 1 tsp
Garam Masala - 1/2 tsp
Brown Sugar - 1 Tbsp (Indians can use lemon size బెల్లం / गुड )
Chopped Cilantro - 1/4 cup
Preparation:
- Take the Nonstick pan and put it on the stove. Add oil to the pan and heat it for 1 min.
- Add the Clove, Cardamom and Cinnamon sticks to the oil.
- Add the Red Chillies, Urad Dal, Cumin Seeds, Mustard Seeds followed by the Curry Leaves.
- Once the seeds start spluttering add the thinly sliced Onions and Green chillies.
- Grind the Ginger, Garlic and Coconut Powder in the Mortar with Pestal ( or use small blender to make a paste).Add this mixture to the pan and fry for 2 min.
- Cut the Acorn Squash horizontally and Seed out, cut the Acorn Squash into big 2 inch cubes and add it to the pan. (Do not peel the Acorn Squash).Close the lid and simmer for 5 min.
- Then add the Brown Sugar and cook it for 1 min.
- Add the Salt, Red Chili Powder, Turmeric Powder, Coriander Powder and Garam masala powder. Close the lid and cook it on low flame for 10 min.
- Check the tenderness of the squash it should be soft. Then take it off from the heat and garnish with chopped cilantro.
- Yum! Yum! Yum! Squash Masala Fry is ready, get ready with Hot White Rice to taste this winter squash delicacy.
Notes:
- As we do not peel the skin, wash the Squash thoroughly before cutting.
- The reason for the peal-on is the squash becomes tender so soon while getting cooked, leaving peel makes it firm with out getting mushed up.
