Savory Semya Upma

Though I am not a big fan of Upma, my better half and wonderful son are big lovers of Upma. So I have started chasing down the recipes for all kinds of Upma. Here is the easy one made with Semya ( Vermicelli or rice noodles) where the whole family can enjoy this savory breakfast together. Enjoy!


Ingredients:
Semya  (Vermicelli) - 2 Cups
Onion   - 1/2 medium
Green Chillies - 2 or3
Ginger  - 1 inch stick
Mixed Vegetables ( frozen) - 1 cup
Tomato  - 1 medium
Cashew Nuts  1 Tbsp
Red Chillies   - 2
Salt - 1 tsp
Urad Dal - 1 tsp
Yello Split Dal - 1 tsp
Cumin Seeds - 1 tsp
Mustard Seeds - 1 tsp
Curry Leaves - 5 to 6
Cilantro - 1 Tbsp
Lime Juice  - 1 tsp

Preparation:
  • Take a Pan dry roast the vermicelli for 1 or 2 min, until it gets light brown color
  • Boil 5 cups of water in a Pot on the stove. When the water is boiling, add the vermicelli to it, boil it for 3 to 4 min
  • Turn off the heat and drain Vermicelli in colander and keep it under running cold water to stop vermicelli cooking anymore). This makes the Vermicelli very fluffy and not mushy and soggy. This is the KEY step for your recipe turn out from good to best.
  • Keep cooked vermicelli on the side

Method:
  1. Heat medium Saute Pan and add oil to it and once the oil is hot, add red chillies, followed by urad dal, and yellow split dal, once these turns brown, add cumin seeds followed by mustard seeds, wait until mustard seeds start spluttering and then add curry leaves. (This process is called seasoning (तड़का / తాలింపు / పోపు )  and very basic and important step in Indian cooking for most of the recipes.)
  2. Add Ginger slices, followed by green chillies and thinly slices onions, after frying onions for 1 min, then add Cashew nuts. ( if you are allergic to nuts, you can skip adding nuts)
  3. Mean while thaw the frozen vegetables in the microwave for 1 min (or 2 min).
  4. Add mixed vegetables to the pan,  followed by chopped tomatoes, once they are cooked well add salt and close the lid and cook for 2 min.
  5. Then add cooked and drained vermicelli to the pan, mix it well and gently. Top with chopped cilantro.
  6. Turn off the stove and sprinkle some lime juice and mix it well. Give 3 min to cool down (allowing all the flavors to sink in) and serve in the plates and enjoy this yummy breakfast on any day with your whole family.


Serving Tip:  You can serve this as a breakfast in the morning or take out in your lunch box for lunch. This is my all time savior for lunch box when I am out of rice or roti.

Hint:  When you are frying the vermicelli keep watching it as Vermicelli can get burned too quickly. You can also get the roasted Vermicelli in the stores, in that case you can skip this step in the preparation.
