Bruschetta ~ The Perfect Italian Strater (step- by - step)

Bruschetta is a simple and perfect starter when you set your table for Italian. From the past few weeks I was craving for this, but whenever i go to Namdhari's, the empty basil bins disappointed me. Today when I went to this store, I found Basil in abundant here, I jumped with joy and bought 3 bags and stacked them in my freezer (Yeah, you are right, more basil recipes will follow... :-)) . As I am craving more for Bruschetta, today I have spent some time to make this in traditional Italian way, this took some effort and time than my routine preparation of simple toss of tomato and basil on the bread, but the whole effort is so taste worthy, it came out very nice and the flavors and aroma are like traditional Italian. My family liked it and said 'Delicious!!', This is a perfect snack to please the crowd for your Game Parties or Potluck gatherings! Here is the step-by step preparation, Enjoy!


There are some tips to get that traditional Italian taste, I have really like this recipe at 'simply recipes', where it is advised to use the char coaled or grilled tomatoes. and infuse the bread with olive oil.

Tomato  - 2 (Roma)
Basil - 2 stems ( 8 to 10 leaves)
garlic cloves - 4 or 5
Olive Oil - 1 tsp
salt - 1/2 tsp
black pepper - 1/4 tsp

Baguette or French Bread - 1
Olive Oil - 1 tsp

Tomato Basil Topping:

Grill the tomatoes on stove. I have used my pulka pan to get the indirect heat. You will see the tomatoes skin wilts and gets burnt slightly. Then remove from heat and peal the skin carefully.

Cut into half and round your knife around in one portion take out the seeds and juice. (That's why Roma tomatoes are best for this recipe than Cluster Tomatoes). Now dice the tomato and add to the bowl. Add the minced Garlic and mix well. Add salt, black pepper and finely chopped basil leaves. Add olive oil and mix it well and close the lid and set aside.

Assembling on Bread:
Now it's bread time.:-) Italian Baguette Bread would be perfect for this recipe. If you don't have that handy or in your near grocery store, don't get disappoint, you can use any French Bread as well.

Preheat the oven to 400 F or 200 C.

Slice the Bread Diagonally into 1/2 inch thick slices.

Brush one side with olive oil.

Place the Oil side down and arrange the slices on cookie sheet. And place this on the top rack of oven.

Keep them in the oven for  5-6 minutes  and Remove this from oven, now the bread becomes crisper with golden edges.

Now turn the bread slices and Place one spoon of Tomato Basil Topping on the olive oil side and Serve immediately.


  • Instead of burning the tomatoes on stove top you can par boil them by dropping in hot boil water to remove the skin easily. I always like char-coal grill vegetables, so I have burned to get that effect in my recipe.
  • If you are taking this to potluck, take the toasted bread in air-tight container and seal the topping in a box. Just top the bread with the topping before you serve them. 
  • If you arrange them ahead of time, the topping makes the breads soggy and ruins the taste of that crisp Bruschetta.

    1. Yes Archana! If you have a good peeler that peel tomatoes gracefully, then you can even skip this cooking step :-)
