Bombay Potatoes in Gravy
This is a simple gravy curry but when you simmer those cute baby (Bombay) potatoes, makes it a special dish. Goes well with your chapati or pulavo.
Ingredients:
Bombay Potatoes - 8
Onion - 1 medium
green chili - 2
Tomato - 2 medium (cluster or non-hybrid)
ginger garlic paste - 1 Tbsp
Coriander Powder - 1 tsp
Dry coconut powder - 1/4 cup
Oil - 2 Tbsp
cumin seeds - 1 tsp
turmeric powder - 1 tsp
red chili powder - 1 tsp
salt - 1 tsp
sugar - 1/2 tsp
coriander leaves - 1 Tbsp
* in USA, fingerling potatoes or baby potatoes are equivalents to Bombay Potatoes in this recipe.
Preparatory Steps:
Method:
Garnish with spoonful of cream on top and garnish with cilantro and serve hot with chapati or rice.

Preparatory Steps:
- Peel and Boil the Bombay potatoes until they are medium soft.
- Heat the non stick pan and add 1 tsp oil. Add chopped onion and saute them until the raw smell goes away. add some salt now add chopped tomatoes and saute well. let it cool and grind it into smooth paste.
Method:
- Heat the kadai or deep pan and add the remaining oil.
- once the oil is hot, add cumin seeds, and after they splutter add ginger garlic paste and chopped green chili.
- Now add the onion and tomato paste. add turmeric powder then salt and saute for 2 min.
- add dry coconut powder, coriander powder and red chili powder. and close the lid and simmer for 5 min.
- Now the gravy comes together, add sugar and taste and adjust all the seasonings.
- Make slight slits to boiled Bombay Potatoes and add them to the gravy. Simmer for 5 min until spices get into potatoes.
Garnish with spoonful of cream on top and garnish with cilantro and serve hot with chapati or rice.
