Chicken Majestic ( Andhra Style )

Chicken Majestic recipe is made with long thin chicken strips that are very well marinated with yogurt and spices then shallow fried and coated with spices to make it super spicy starter. 

Chicken Majestic in Andhra Style

At one time (5 or 6 years ago) Mayuri's Restaurant Catering Food was famous at our parties in Dallas. I like their Babycorn Majestic ( appetizer that is made with BabyCorn) on their catering menu. When i saw this Chicken Majestic recipe at Nag's space, that took me back in time and reminded me of Babycorn Majestic flavors. So I couldn't resist  ( i mean to cook, not to eat ;-)) and tried this Chicken Majestic recipe on the following weekend. This came out too good that even my mom-in-law (who was not eating chicken this year) couldn't resist and tried. And obviously on that day Chicken Lovers at my house father-in-law, Vj and Anvi, Aaah Ooohed about this spicy tongue tickling starter. I have almost followed the recipe from Edible Garden but with some variations to suit my family needs. Here is my version of this recipe, Njoy!




Ingredients:
Adapted from: Edible Garden

Chicken - 1/2 lb ( 250 g) ( Boneless cut into long thin strips)

For Marination:
Yogurt - 1/4 cup
Ginger Garlic Paste - 1 tsp
Red Chili Powder - 1 tsp
salt - 1 tsp
All Purpose Flour (APF) - 1 Tbsp
Corn Flour - 1 Tbsp
Egg - 1

Oil - to Shallow Fry ( 1/4 cup)

For Sauce:
Curry Leaves - 10
Onion - 1/2 medium
Garlic - 2 cloves ( minced)
Green Chili - 2
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tsp
Red Chili Powdedr - 1 tsp
salt -  1 tsp
coriander leaves - 1 tsp
soy sauce - 1 Tbsp
yogurt - 1/4 cup
Garam Masala - 1 tsp
Lime Juice - 1 tsp


Method:
  1. Take a medium bowl and mix yogurt, ginger garlic paste, salt  and  red chili powder. Coat chicken with this mixture and marinate overnight in the fridge. ( or at least 4 hours)
  2. To this marinate chicken add APF, Corn Flour and Egg. Mix well until the chicken is coated with flour mixture.
        
  3. Heat oil in the non-stick pan and shallow fry the chicken pieces until they get browned and keep them aside in the plate.
  4. In the same pan ( you will still have some oil) fry the curry leaves and set aside
     
         
  5. In the same pan, add chopped onion, green chili, coriander and minced garlic. Once the onions are sauteed, add salt, turmeric powder, red chili powder and coriander powder. mix well spices and onions.
  6. Add yogurt to the mixture and let it simmer. then add soy sauce and give a quick stir. Now add fried chicken pieces to the pan and combine well with spice sauce. Chicken gets coated with spices and becomes dry. Now add garam masala powder on top of chicken and give a gentle stir.
       
  7. Switch off the stove and transfer Chicken into wide plate add a squeeze of lime juice. Arrange the chicken strips as layers and top with curry leaves, lime wedges and onion rings.
Ta Daaaaa, Delicious Spicy Andhra Style Starter Chicken Majestic is ready now....!

  7. hi , lts a mouth watering dish,need to try may i know pls shall i use breast or thigh strips ..i am just worried as my deep fried chicken always turn out hard. thank you so much for such an wonderful recipe.

    1. Hi Mane, I have used Chicken Breast and cut them vertically into long slices to yield long strips. I suggest to buy the wider breast that gives lengthy strips. Deep fried chicken getting hard depends on Chicken Freshness, get the young and tender chicken breast, try to get it from farm fresh markets than big retail stores where meat is kept longer in the freezers. The longer it freezes the chicken becomes harder when you cook.

      While you are marinating, first rub the salt all over the breast and leave it for 30 minutes and add rest of the marinate ingredients. salt marination will make the chicken very tender after you cook it.
