Chewy Chocolate Chip Cookies
Usually I am not a big fan of cookies or any sweet stuff. ( but love Salty and Sassy stuff ;-) ). But some times I feel like crave for freshly baked cookies. When they are fresh out of the oven, will be slightly warm, really soft, chewy and melts in mouth, the whole experience feels so comfortable and delicious. ( May be that's why these days even 'freshly baked cookie' flavored scents and fresheners are coming in the market). So one day We ( me and my little helpers) decided to make Chewy Chocolaty Chip Cookies for a Cookie Exchange event. This is a long time due recipe from last Christmas and now jumping into space here... Njoy!
Ingredients:

All Purpose Flour (APF) - 2 1/4 cup
Baking Soda - 1/2 tsp
Unsalted Butter - 1 cup ( at room temperature)
Granulated Sugar - 1/2 cup
light-brown sugar - 1 cup
salt - 1 tsp
vanilla extract -1 tsp
Eggs - 2
semisweet chocolate chips - 2 cups
Method:
1. Pre-Heat the oven at 325 F.
2. In a medium size bowl Add APF, Baking soda and salt. Mix it well. set aside. In another medium bowl add Unsalted Butter, mix with both Sugars and mix it well.Add eggs and Vanilla extract and beat with electric mixer for 5 strokes or with spoon for 2 min. Add the flour mix and make a thick dough and stir in chocolate chips.
3. Drop 1 Tbsp balls of dough 2 inches apart on baking sheet lined with parchment paper.
4. Bake until cookies are done around edges but soft in the center 8 - 10 min. Watch after 8 min carefully.
5. Remove from oven and let them cool for 1 to 2 min. transfer them to wire rack and let cool completely. And Enjoy the little treats when they warm.
If there will be any left after your little helpers and hungry hubby from office finishes these warm cookies, store them in air -tight container for up to 1 week.

- Keeping the oven temperature at 325 will make the cookies soft and chewy.
- After 8 min watch carefully these can turn dark pretty quickly.
