Mushroom Masala

Whenever my sister needs to make Andhra Style Chicken Curry she sincerely follows my recipe. One day she experimented the same recipe with Mushrooms and it turned out to be a hit. I haven't really tried any gravy curries with Mushrooms (until today), as i don't like the slimy texture of cooked mushrooms. Today I am determined to give it a try and took a challenge to remove the slimy texture of mushrooms in the gravy curry. I have almost followed my Andhra Style Chicken recipe for this dish with some minor changes. In this dish slightly sauteed mushrooms are bathed in the gravy of onion & tomato and poppy seed & cashew grind and simmered with garam masala and spices. The end result is so tasty and got several yummy compliments from my family; my soul satisfied for trying a new recipe that i am afraid of and one recipe is off  from my list of recipes to try. This dish goes very well with rice or roti. Now I got a special item on the menu for my vegetarian guests. Thanks to my sister for inspiring me to try this Dish. Here is the recipe.. Njoy!

Mushroom Masala Curry

Ingredients:

To saute mushrooms:
Mushrooms - 1 cup
Olive Oil - 1 tsp
Black Pepper - 1/2 tsp

Masala Paste:
Onion - 1/2 medium
Poppy Seeds - 1 tsp
Cashew Nuts - 2 Tbs

For Gravy:
Red Chillies - 2
Cumin seeds - 1/2 tsp
Onion - 1/2 medium
Ginger Garlic paste - 1 tsp
Tomato - 2 ( cluster and ripe)
Turmeric Powder - 1/2 tsp
salt - 1 tsp
Red Chili Powder - 1 tsp
Coriander Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Oil - 1 Tbsp
Cilantro ( Coriander leaves) - 1/3 cup




Preparatory Steps:
  • Wipe the Mushrooms with wet cloth to clean them. Chop them into small pieces ( if they are big). Otherwise leave them as it is. Today I have used Big Bella Mushrooms for this curry, I have sliced them vertically.  Add 1 tsp oil to the non-stick pan. Add mushrooms to the pan and add black pepper, saute them until they wilt little bit. ( about 5 min)
  • Roast the Poppy Seeds and Cashew Nuts in the pan. Grind the Poppy Seeds and Nuts in a small mixie jar until it becomes powder. Add the Chopped Onions to the same jar and grind along with it. It becomes like a creamy paste. 

Method:
  1. Heat the oil in the heavy bottomed vessel ( I have used pressure pan), once the oil is hot add crushed red chilies and cumin seeds. After roasting then for 1 min add ginger garlic paste to the pan. As you notice oil separates, add turmeric powder, chopped onions and let them saute for 3 min.
  2. Add chopped Tomatoes to the pan . Add red chili powder, coriander powder and salt. Let the Onion and Tomato mixture simmer with spices. 
  3. Now add the Poppy Seed and Cashew paste to the pan and add water if needed, simmer until it becomes like gravy. Add half of the cilantro to the gravy.
  4. Add the roasted mushroom to the gravy. Add garam masala powder to the gravy. Close the lid and simmer for 5 min. ( if you are using the pressure pan close the lid and cook under steam for 5 min or until 1 whistle comes, and remove from heat, allow it cool and open the lid). Taste and adjust any seasonings.
  5. Transfer this into Serving Bowl,  Finally Garnish with finely chopped cilantro. Serve hot with white rice or soft roti.

Notes:
  • Don't wash the mushrooms under water that makes them soggy in the gravy. Always clean them with wet cloth to remove the dirt. 
  • Sauteing the Mushrooms before keeps their shape retain even after putting them in gravy.
  • Mushrooms are little salty in nature, keep that in mind for your salt measurements.
