Carrot Utappam
Today I am sharing a simple Indian Breakfast Recipe with sneaked carrots for your Kiddos. Utappam is popular South Indian Breakfast that is made with left over Idli Batter. Usually it is made a lot thick and known as 'Dibba Rotte' ( Thick Bun), it tastes sour due to fermented Idli Batter, but the added onions and cumin seeds adds zest to it taking it to next level. But usually I make Utappam little thinner version ( compare to Dibba Rotte) by adding some Rice Flour to the Idli Batter. Most of the time I try to sneak in some vegetables like Carrot, Zucchini ( in addition to onion and green chilies) which blends into the Utappam taste very well. Today One such recipe is this Carrot Uttappam, Here is the recipe!
Ingredients:
Idli Batter - 1 cup
cumin seeds - 1/2 tsp
salt -1/2 tsp
Onion - 1/2
Green Chili - 1
Carrot - 1 medium
Rice Flour - 1 Tbsp
Water - 2 Tbsp
Oil - 2 Tbsp ( vegetable or Canola)

Carrot - 1 medium
Rice Flour - 1 Tbsp
Water - 2 Tbsp
Oil - 2 Tbsp ( vegetable or Canola)
Method:
- Mix Rice Flour with Water in a small bowl and add this to Idli batter; mix it well until it blends into batter. Add cumin seeds and salt to the Batter.
- Chop onions and green chilies finely and add to the batter. Peel the carrot and trim edges. Grate the carrot at medium setting. Mix this grated carrot into batter. Now your batter is ready.
- Heat the non-stick pan and add 1 tsp of oil, once the oil is hot drop 1/3 cup of batter and spread it evenly ( it will be thick compare to dosa, so don't spread it too much). Let it cook on one side on slow heat and flip it and add another 1 tsp of oil and let it cook on another side. ( you can close with the lid to cook evenly). It takes at least 5 min to cook properly on both sides.
- Repeat the same process until you are done with the batter. You might yield 3 to 4 Utappams.
Transfer to Serving Plate and serve Hot with Ginger Chutney or Coconut Chutney.
