Kodi Vepudu ~ Andhra Style Chicken Fry ( with less Oil)

Today I am going to reveal my mom's Chicken Fry recipe that is pretty popular in my family and relatives. This Chicken Fry is made with very less oil with out compromising on the taste. Chicken naturally comes with lot of fat in it,  if we cook it wisely it doesn't require additional oil at all. In this recipe, first we will cook the chicken that is marinated with spices until becomes tender and then fry with caramelized onions, curry leaves, cilantro, masala spices and saute with some coconut powder to add the creamy touch and finally topped with fried cashew nuts... The whole preparation looks scrumptious!!!!


The twist here is my mom doesn't eat chicken, so she makes this curry with out even tasting it. But every time she makes it the same texture and taste it gets; That's what amazes me! so My dad will be always ready to give a taste test to this. and my sister will be next! My sister and dad always finish this curry as they both are fond of chicken! so with out any due, here is the recipe, Njoy!



Ingredients:
Chicken - 1 lb

For Marination:
Yogurt - 1 cup
salt - 1/2 tsp
Red Chili Powder - 1 tsp
Coriander Powder - 1 tsp
Turmeric Powder - 1/2 tsp

For Stir - Fry:
Oil - 1 Tbsp
Onions - 1 cup ( sliced)
Green Chili - 1
Curry Leaves - 5
Cilantro - 2 Tbsp
Ginger Garlic Paste - 1 Tbsp

Salt - 1 tsp
Coriander Powder - 1/2 tsp
Garam Masala Powder - 1 tsp
Coconut Powder - 2 Tbsp

Cumin Seeds - 1 tsp
Cinnamon Stick - 2
Clove - 3
Star Anice - 1
Cardamom - 1

Ghee - 1 tsp
Cashew Nuts - 1 Tbsp

Preparatory Steps:
  • Mix salt, red chili powder, coriander powder and turmeric powder in 1 cup of yogurt and coat the chicken with this mix and let it marinade for at least 3 hours or whole night in the refrigerator.
  • Fry Cashew Nuts in 1 tsp of  Ghee until they turn to Golden color.
  • Heat Nonstick pot and add Marinated Chicken and Cook for 15 min or until chicken becomes very tender and starts leaving the bone. 
Method:
  1. Heat non-stick pan and add 1 Tbsp oil to it. Once the oil is hot add cumin seeds followed by Cinnamon Stick, Clove, Star Anice, Cardamom. 
  2. Add chopped green Chili and sliced onions. Saute them until onions become soft and translucent. 
  3. Add salt and coriander powder and saute them well. Now Add Curry leaves and Cilantro and let the onions simmer with spices and herbs on medium heat. Add Coconut Powder and mix it well.
  4. Now Add cooked chicken to the pan and saute it with rest of the spices. Add Garam Masala and let it sit for 30 seconds, so that chicken gets coated with it. Now Finally keep the heat on high and stir-fry the chicken spices and masala, top with Cashew Nuts. Transfer this to bowl and garnish with some more cilantro. 


This pairs well with simple veg pulao or coconut rice. Goes well with Roti and Chapati for a North Indian Thali.
