Cucumber Idli ~ Instant Idli ~ Konkani Recipes

One fine morning, I was just in search of some Instant Quick Idli recipes. I have already tried Instant Rava Idli before, time to try some thing new. And I am not in the mood for oatmeal today, so that narrows the selection to very limited Instant Idli recipes out there, and this Cucumber Idli, a Kokani recipe is the winner for that morning! My first thought on this recipe, Cucumber and Idli, weird! And Instant that is interesting. After looking at the recipe, then I am I got to try this and keep my fingers crossed to know how soft this Idli will turn out. Well, the end of result of this recipe answered all my emotions calling it an Happy Ending! Here is the recipe, Check it Out!



Ingredients:
Idli Rava - 1 Cup
Cucumber - 1 Large ( or 2 small)
Grated Coconut Powder - 3 Tbsp
Green Chilli - 3
Ginger - 1 inch stick
Coriander Leaves - 1 Tbsp ( Optional)
Salt - 1 tsp

Method:
  1. Wash the Rava and keep it aside. Trim the edges of cucumber and grate it into small bowl. Squeeze the excess water out of cucumber. Add the squeezed cucumber to Rava and Save the Water.
  2. Add Coconut Powder along with Cucumber Water and grind it until smooth consistency. Add this to Rava and Cucumber Mixture.
  3. In the small mixie Jar, add, Ginger, Green Chili, (Coriander Leaves if using) and grind it into smooth paste. Add this to the Rava mixture. Add 1 tsp of salt to the mixture and mix it well. 
  4. By this time the Rava mixture becomes watery, ( depends on your cucumber), if this is not watery add 2 Tbsp of Water ( or more) to the Batter. At this time you will get a smooth running batter, remember this will be little runny in texture compare to your normal Idli Batter.
  5. Now pour this into lightly greased Idli Plates. And add 1 tsp of water in each mold before you stack and put into Idli Cooker. 
  6. Cook the Idlis in Pressure Cooker in the similar way as how you cook normal idlis ( 10 to 15 min pressure cooking).
  7. After 10 minutes, time for moment of truth. Open the Idli Cooker ( now you can uncross your fingers,  :-P i know you must be crossed your finger already to witness the results) and let them cool for 5 min. And remove the Idli from molds. Initially the Idli looks little watery but after 5 min, the Idli becomes firm. Serve when they are hot, with Peanut Chutney or they tasted wonderful with Sambar. 

How did they turn out?  Super....! :-)

Notes:

  • As we have used cucumber in this Idli, this Idli will not last that long. So prepare in small quantities and enjoy these immediately. I would not recommend to store in refrigerator or for reuse at all. 
  • This Idli is purely made with Idli Rava no Urad Dal at all. 
  • You can use a pinch of Baking Soda or 1 Tbsp of Eno Water to get the firm shape.
