Flourless Banana Peanutbutter Muffins (No Flour, No Butter, No Sugar)

People, this recipe is so easy and quick to make with simplest ingredients and procedure, all you need is few ripened bananas and some peanut utter handy to make these fluffy and delicious muffins just under 30 min. It is as simple as grind all ingredients in Blender and convert the batter into beautiful muffins, by baking in oven, it is as simple as that truly. The taste and texture of these muffins is so unbelievable, you gotta to try these, I can't explain in words! Here is the recipe, Njoy!





Ingredients:

Ripe Bananas (medium) - 2
Eggs - 2
Creamy Peanut Butter - 1 cup
Maple Syrup - 1/4 cup
Honey - 2 Tbsp
Vanilla Extract - 1/2 tsp
Baking Soda - 1/2 Tsp
Semi Sweet Milk Chocolate Ships - 1/2 cup (optional)

Method: 

  1. Pre-heat oven to 400 F. Grease the Muffin tray with PAM or Oil.
  2. Add all the Ingredients (except chocolate chips) in Blender and blend until it turns to smooth batter ( i have used my Nutribullet for this task)
  3. Fold in Chocolate chips into batter ( f you are using)
  4. Pour the batter into muffin try and distribute equally by filling up to 3/4 in each mold
  5. Bake in the oven for about 12 to 15 min (keep watching after 12 min, to avoid any over burn on top)
  6. Take them out and cool the muffins in tray for about 5 to 10 min (allowing them to cook while cooling in the tray)
  7. After 10 min, take out the muffins and enjoy them while they are slightly warm right way and these store good for 2 days at room temperature and up to 4 to 5 days in the fridge. 

 

Notes:

  • Chocolate Chips are optional, if you don't have them handy you can skip or settle with some Nutella you need some chocolaty touch. 
  • If you don't have maple syrup handy, you can replace with waffle syrup.
  • Since fresh fruit is used it is recommend to consume these quickly with in 2 to 3 days
  • I can't tell you how addicted these are as it is so easy and fuss free to make and my whole family loved these (not even knowing that their share of ripe bananas went in here, Shhhhh!). Win-Win!
