Matar Paneer
Matar Panner is a simple Paneer curry that goes well with roti or chapati. As peas and panner makes this dish creamy and slightly sweeter in taste, this will be kids friendly recipe for sure. Usually in restaurants this dish is made with tons of cream in it. But this recipe is light and lean with out any cream added and comes with very less calories but with the same great taste. Here is the recipe, Njoy!
Ingredients:
Paneer - 1 big block ( 400 g)
Matar (Green Peas) - 1 cup ( i have used frozen Sweet Green Peas)
Butter - 1 Tbsp
Cilantro - 1/2 cup
Cumin seeds - 1 tsp
Ginger Garlic Paste - 1 tsp
Turmeric powder - 1/2 tsp
Red Chili Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Salt - 1 tsp
Sugar - 1 tsp ( optional)
Masala Paste:
Oil - 1 Tbsp
Clove - 1
Cinnamon - 2 sticks
Onion - 1 medium
Tomato - 2 to 3 ( Cluster Tomatoes)
Green Chili - 1

Ingredients:
Paneer - 1 big block ( 400 g)
Matar (Green Peas) - 1 cup ( i have used frozen Sweet Green Peas)
Butter - 1 Tbsp
Cilantro - 1/2 cup
Cumin seeds - 1 tsp
Ginger Garlic Paste - 1 tsp
Turmeric powder - 1/2 tsp
Red Chili Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Salt - 1 tsp
Sugar - 1 tsp ( optional)
Masala Paste:
Oil - 1 Tbsp
Clove - 1
Cinnamon - 2 sticks
Onion - 1 medium
Tomato - 2 to 3 ( Cluster Tomatoes)
Green Chili - 1
Preparatory Steps:
- Chop Onions, Tomatoes, Green Chili and set aside.
- Chop Paneer in 1/2 inch cubic blocks.
- Thaw frozen peas in microwave or outside.
Masala Preparation:
- Heat non-stick pan and add 1 Tbsp of oil. Once the oil is hot, add panner cubes and sauté them on all sides until they turn slight brown. Take out the panner cubes into a plate and set them aside.
- In the same pan, add clove and cinnamon, followed by green chili, onion saute these until onion become translucent ( about 2 min), add chopped tomato now and saute for 2 more min. Let it cool or 5 min, and then grind everything together into coarse paste.
Method:
- Heat non-stick pot and add butter to it. Once the butter melts add cumin seeds followed by cilantro. As cilantro starts wilting, add ginger garlic paste and turmeric powder, mix everything together with butter.
- Now add ground masala paste to the pan and mix it in. Cover with lid and simmer for 3 min.
- Now add salt, red chili powder, garam masala powder and mix it in gravy. Simmer for 2 more min. Now you will get gravy consistency. If it is thick, add 1/2 of of water to thin the gravy.
- Add thawed matar (sweet peas) to the gravy and combine well. Close the lid and simmer for 5 min. Taste and adjust salt per your taste.
- Add sautéed panner cubes to the gravy and combine well gently, until paneer cubes are coated with gravy. Simmer on high for few more minutes. Switch off the stove, transfer to a bowl and garnish with coriander leaves. Serve hot with Roti or Chapati.
Notes:
- If the gravy turns out spicy and you want to soften the taste, you can add the 1 tsp of sugar to the gravy in step #4 right before adding paneer cubes.
- Since I have used Sweet Peas, they add slight sweet taste, hence I didn't added any sugar in my recipe.
- If your tomatoes are not juicy and tangy, this curry won't get the same taste. Then you can add 1 tsp of lime juice at the end into gravy, that adds slight tangy taste softening all other spices.
- Adding Cilantro in tempering will get very unique taste to this dish.
- Some recipes suggest pressure cooking for this recipe, I don't prefer that as pressure cooking will take away beautiful green color from peas, hence i suggest you to be patient and cook this dish on stove top.
Hope you liked this recipe,
Will be back with another restaurant style recipe
take care until then!

Paneer Burji ~ Colorful Scrambled Paneer
Today I am presenting this colorful scrambled panner recipe, that is very easy to make with paneer. This will be a nice variation from your routine Egg Burji when you have Paneer Lovers at home. I sneak in lot veggies to make it healthy and colorful. Often I do stuff this in English Muffins or on Breads to make a protein filling breakfast. Complete Win-Win for my family. Here is the recipe, Njoy!
Notes:

- Wait until mustard seeds starts spluttering, then add chopped green chili and chopped onion, add turmeric powder. Sauté for 2 min until raw smell of onion goes away.
- Then add chopped veggies and sauté them along with onion mixture for 3 to 4 min. Add salt to veggies in between.
- Vegetables starts becoming tender, then add chopped paneer to the pan and mix with all the veggies. Sauté for 5 min until panner is cooked. Add Coriander powder and red chili powder.
- Keep on mixing Paneer with veggies until it gets scrambled and coated with spices on high heat.
- Top with Cilantro and switch off the stove and transfer this to bowl, server hot with white rice or soft roti.
Colorful Scrambled Panner
- Coriander powder and Red chili powder are optional in this recipe, you can skip of these makes it spicy for your kids.

Once the Bbaycorn and Paneer becomes soft, add thawed Mixed Veg to the Pan. Add spices.

Paneer Stuffed Mushrooms (Step-by-Step) ( Under 15 Minutes)
In the beginning I was never fond of Mushrooms or Panner. But over the time as I have started experimenting with these two ingredients, I have developed interest towards these. By nature these two ingredients are protein filled and one can make several variations, now that combo results in protein source healthy recipes for vegetarians. Today these wonderful ingredients are meeting in this recipe, is a coincidence in my kitchen (that I thought it would never happen, not even in dreams). But as that happened, I have started tasting these, one after another I kept on eating until my eyes witness the empty plate, Oh Boy, these cute little Paneer Stuffed Mushrooms turned out that Good! Here is the recipe, you have to try these!
Paneer Stuffed Mushrooms
Forgot to mention these take only 15 minutes to make that serves two people.
Prep Time: 10 min
Cooking Time: 5 Min
To finish it: in No Time :-)
Ingredients:
Mushroom - 1 lb ( or 10 in number)
Paneer - 1/2 block ( Indian Cottage Cheese)
Onion - 2 Tbsp ( finely chopped)
Green Chili - 1
Cilantro - 1 Tbsp
salt - 1 tsp
black pepper - 1/4 tsp
chat masala - 1 tsp ( optional)
Mexican 4 Cheese - 1/4 cup
Oil - 1 Tbsp
Method:
Grate the Panner block with Grater (in small grating setting).
Add salt, black pepper, chopped onion, green chili, cilantro. Finally add chat masala mix it gently with spoon, close with lid keep it aside.
Clean mushrooms with wet towel to take off any dirt. Carefully snap the bottom stems with out breaking the top part that leaves cute little mushroom bowls.
Remove any excessive flesh inside gently with fork and set them aside.
Stuff grated panner mixture into mushroom bowls. Do not press it hard. ( to leave room to cook properly inside).
Top with mexican cheese on all the stuffed mushrooms.
Heat non-stick pan and add oil. Once the oil is hot, add stuffed mushrooms to the pan.
Keep it low cook them for 5 min. You will notice the cheese starts melting and sealing the mushrooms on top.
Now it is ready, transfer them to the platter and serve immediately.
- Never wash mushrooms under water, that makes them mushy in your dish.
- First try making the panner mixture, leaving them aside with spices it let the flavor sink in while you clean mushrooms.
- Chat masala is optional, you can skip, if you like mild version.
- To make it more zesty, replace green chili with Jalapeno slices.
Take a peek at inside. Yummm! Wanna Bite?
keep smiling and spread the joy ! :-)

Paneer Pakora ( Indian Cottage Cheese Fritters) ~ Tea Time Snacks
It is so true that in the beginning I am not fond of Paneer, in the past two years I have tried several variations with it and I started fallen in Love with it! The more varieties you try with it the more you want to explore with this amazing protein filled Ingredient for Vegetarians. Today I have tried snack version out of it and it turn out be so delicious to match up with your Chai time instantly. Here is the recipe, Njoy!
Ta Daaa, Delicious Chai Time Companion Panner Pakora are ready now to please the Crowd! :-)
Ingredients:
Panner - 1/2 block ( or 250 g)
Besan ( Gram Flour) - 1 cup
Baking Soda - 1/2 tsp
salt - 1 tsp
red chili powder - 1/4 tsp
Coriander Powder - 1/4 tsp
Chat Masala - 1/4 tsp ( optional)
Cilantro or Mint - 1 tsp ( finely chopped)
Onion Rings and Lime - for Garnish and serving
Oil- for deep frying
Method:
- Take the Besan flour in a medium bowl and add all spices along with salt and baking powder. Mix all the dry ingredients well and keep it aside for 5 min. Now add water little by little to make it like a meidum consistency batter. Add chopped Cilantro or Herbs. Keep it aside for 10 min.
- Chop the Paneer in thin slices ( like bite size squares, not cubes). Dip them in the batter until they are fully coated. Leave them there for 5 min. This will help the batter to be coated around all the corners.
- Now heat the Oil in kadai and wait at least 5 min ( or 7 min), for it to be Hot and ready for deep trying.
- Now Carefully pick up the batter coated Panner Squares and drop them slowly into oil. Turn them over and let them cooked on both sides until they become Golden Color. We have to repeat this step in batches until you are done with all the paneer squares.
- After frying take them out on to Paper Towls to remove excess oil from it. Once every thing is done arrange them on Platter and top with Onions Rings and Lime slices ( and Sprinkle some Coriander Powder)
Ta Daaa, Delicious Chai Time Companion Panner Pakora are ready now to please the Crowd! :-)
Tips:
- Don't cut the Paneer into too small pieces, that will extract lot oil while it's frying and makes it very oily which you don't want.
- Chat masala is optional spice that is used here for extra kick and zest. You can just add Amchur powder or totally eliminate this spice to make it less spicy.
- For any deep frying dishes Hot Oil is critical, be patient and wait until the Oil Hot before you drop anything into it, it doesn't hurt to test it out first with small quantities. ( believe me, this step is test for my patience, now you know why I don't venture a lot in making deep frying stuff)

Chilli Paneer (Quick 'n' Easy)
I have to admit i was not a big fan of Paneer in the beginning due to it's dense and fatty nature. I always use TOFU in place of Paneer before. As my sister is visiting today I was planning to make something special and started making the recent Panner hit recipe with Tomato. Then it started raining and now I am in the mood to make something spicy, zesty and lip smacking dish. So switched gears and made this quick fix appetizer with Paneer and absolutely loved it. so did my sister like it? You Bet! Here is the recipe enjoy!

Paneer Tomato Curry (Simple & Delicious)
Here comes another effortless delicious simple exotic Paneer Curry. This curry is very easy and can be made with basic ingredients that you can easily find in your Pantry. In any Indian gravies or curries the addition of tomato puree is usual, but in this curry Paneer gets coated with mild masala and simmers in exclusively tomato puree until the tangy tomato flavor sinks into it, which makes it special and unique. During our recent family reunion, my cousin Tara (and wonderful cook) made this curry in hurry. Me & my sister just loved it and surprised at how quickly she fixed this superb dish. Since then I am hooked on to this. This goes very well with any flavorful rice like pulao or jeera rice. Today I have served this bright delicious Paneer Curry with mild colorful vegetable pulao and the guests are totally delighted with this combination. Here is the recipe, Njoy!

Palak Paneer ( Step by Step)
Usually I am not a big fan of Paneer recipes, as Paneer (Cottage Cheese), tastes bland by itself and I used to think it is fatty. But recently when i came to know about the nutritional values that it has, it is not only a good fat but also is a good protein source for vegetarians. When I was a kid Whenever we go out for dinner, My mom used to always order Pulkas along with the Palak Paneer as she is a vegetarian. I haven't realized the greatness of this combination until I have mastered this signature recipe and making it quite frequently. This rich creamy spinach gravy is not spicy but flavorful, and when the paneer gets simmered in this, it tastes Exotic and not bland. Here are the Step-by-Step instructions to make it easier for you, Enjoy!
Ingredients:
Chopped Onions - 1 cup
Chopped Tomato - 1 cup
cubed Panner - 1 Cup
Spinach ( Palak) - 4 cups
ginger garlic paste - 1 Tbsp
cumin seeds - 1 tsp
chopped garlic - 1 Tbsp
salt - 2 tsp
Red Chili Powder - 2 tsp
coriander powder - 1 tsp
cumin powder - 1/2 tsp
Turmeric poeder - 1 tsp
cinnamon - 2 flakes
cardamom - 1
clove - 2
Oil - 1 Tbsp
Method:
Ta da! your restaurant stylish (or even better than restaurant) Palak Panner is ready now. Transfer this into a bowl and garnish it with red onions.
Serve with Chapathi/Roti/Pulka and now dig in. To accompany this creamy taste you can add sliced red onion rings sprinkled with lime juice on top.
Tips:
Palak Panner
Chopped Onions - 1 cup
Chopped Tomato - 1 cup
cubed Panner - 1 Cup
Spinach ( Palak) - 4 cups
ginger garlic paste - 1 Tbsp
cumin seeds - 1 tsp
chopped garlic - 1 Tbsp
salt - 2 tsp
Red Chili Powder - 2 tsp
coriander powder - 1 tsp
cumin powder - 1/2 tsp
Turmeric poeder - 1 tsp
cinnamon - 2 flakes
cardamom - 1
clove - 2
Oil - 1 Tbsp
Method:
First Boil 3 Cups of water and add the spinach to it. Do not close the lid. After 5 min, turn off the heat drain the spinach and let it cool and make it into a paste using blender or mixie.
Take the non stick pan and heat the oil. Once the oil is hot add the Cinnamon, cardamom, clove, cumin seeds.
Add Chopped Onions and garlic and saute for 3 min.
Add Ginger Garlic Paste and wait until the oil separates. Now add turmeric powder and salt. Mix well.
Add Tomatoes. Let it cook with onions for 2 min.
Add Red Chili Powder, Coriander Powder and Cumin Powder. Mix it very well.
Now add the spinach puree (palak paste) to the pan.
and let it simmer by cooking it on low heat. so that all the flavors and spices will sink in.
Taste and adjust all the seasonings and now add the paneer cubes.
Now simmer for few minutes and let paneer get coated with all these spices.
Tips:
- Cooking the spinach gravy on low will add good taste to this dish.
- At the end you can add some fresh cream for creamy taste.
- go moderate with your salt, as spinach is already salty by nature.
