Spicy Gutti Vankaya - Andhra Style

There is a deep justifying reason for Brinjal to be called as King of Vegetables, because you can make so many variations and varieties with this vegetable and every version gives a new perception to this vegetable. My love for this vegetable never stops, only grows as I explore and try many recipes with it. Today I am craving for a spicy version of Gutti Vankaya and settled with Andhra Style recipe, that won my family's taste buds. Even My daughter (youngest in family) approved this recipe, it is lil spicy for her, but she loved the flavors and asked for many servings (made mama so proud). Here is the recipe, Njoy!


Ingredients:

Gutti Vankaya (Small Baby Eggplants) - 15

Onion - 1 large

Oil - 3 Tbsp

Cumin Seeds - 1 tsp

Salt - 2 tsp ( per taste)

Turmeric Powder - 1 tsp

Red Chili Powder - 1/2 tsp

Ginger Garlic Paste - 1 Tbsp

Stuffing Masala Ingredients:

Peanuts - 1 cup

Coriander Seeds - 2 Tbsp

Dry Coconut Flakes - 5 strings (or 2 Tbsp)

Cinnamon - 1 inch stick

Clove -  2

Red Chili Whole - 7

Sesame Seeds - 1/4 cup

Poppy Seeds - 2 Tbsp

Salt - 1 tsp



Stuffing Masala Preparation:

  1. First dry roast peanuts and set aside. In same pan dry roast coriander along with cinnamon, clove and at the end add dry coconut flakes or coconut powder, roast slightly for 1min, keep them aside in a plate
  2. Dry roast red chili for 1 to 2 min in a pan and keep them aside. In the same pan add sesame seeds and poppy seeds and roast for 1 min. ( be careful and watch out, sesame seeds can quickly burn out)
  3. Let all these roasted ingredients cool for 5 min. Then grind all of these in mixie jar until it becomes fine powder. Add salt to this powder and mix it well
Stuffed Brinjal Preparation:

  1. Wash eggplants, trim edges and make 2 slits at the bottom that makes into 4 sections, add these to warm water with salt in it. 
  2. Stuff the masala in baby egg plants and press firmly in between palms, that helps to seal the masala inside. keep aside in a wide plate. 

Method:

  1. Take a heavy bottomed wide pan and heat on stove. Add 2 Tbsp oil to it. Once oil is hot, add cumin seed, as they splutter, add chopped onion and saute for 2 to 3 min, until onion caramelizes. 
  2. Add ginger garlic paste and mix with onion and cook for 2 min (until the raw smell goes away)
  3. Add salt, turmeric powder, red chili powder to onion mix; close the lid and cook on slow heat until onion mix come together (for 5 min)
  4. Add Stuffed Eggplants to pan (arrange them carefully in pan) and cook for 10 min on slow heat by closing lid.
  5. After 10 min, you notice eggplants change color and tend to become soft, turn over each eggplant carefully allowing them to cook on other side and cook for 5 min.
  6. Add remaining stuffing masala in 1 glass of water, add water to pan on top of egg plats. change the heat to medium, close lid and cook/simmer for 10 min.
  7. After 10 min, gravy comes together and egg plants are cooked fully becoming soft, taste and adjust any salt according to your taste
  8. Top with Cilantro, switch off the heat, let the pan stay on stove for 10 min; when you are ready to eat, then serve warm along with white rice and enjoy the spicy flavors in this Andhra Style Curry!

Lasooni Baingan ~ Eggplant cooked in Spicy Garlic Sauce

I have fallen in love with this curry when I tried first time at an exotic India Restaurant Peacock Elite. I have never heard this variety or name before that too made with my favorite veggie Baingan/Vankaya. The taste of this curry is amazing and flavors definitely are new to my tastebuds and there is some unique flavor in this curry. That is it, I came home with a determination to replicate this curry in my kitchen. Upon few searches on internet I didn't get the exact recipe any where with this name, However I came to know that Lasoon in Hindi means Garlic. I have browsed few recipes and mixed with my sense of taste and created my own version of this recipe, Oh my... this turned out so good. The garlic flavors in this curry yet subtle but giving very bold taste to this curry. I am sure this will be hit on your dinner table or at any potluck entries. Give it a try, here is the recipe for you, Njoy!

Lasooni Baingan
Ingredients:
Eggplant - 1 large (if you are using Italian Eggplant - use 3 to 4 medium)
Onion - 1
Tomato - 1
Garlic - 1 (1 pod, or 8 to 10 cloves)
Green Chili - 3 medium
Ginger - 1 inch stick
Turmeric Powder - 1 tsp
Salt - 1 to 2 tsp ( adjust per your taste)
Red Chili Powder - 2 tsp
Coriander Powder - 1 tsp
Oil - 1/4 cup
Cilantro - 1 Tbsp for garnish

Cumin Seeds - 1/2 tsp
Mustard Seeds - 1/2 tsp
Fenugreek Seeds - 1 tsp (roughly ground)

*yields - 8 servings

Preparatory Steps:

  • Chop Onion length wise. Chop tomatoes into very thin pieces or if you have chunky tomatoes, grate them. Peel and chop ginger into very thin sticks (julienne cut)
  • Trim and chop Eggplant into 1 inch cube size and keep them in warm water with salt. This prevents eggplant from blackening.
  • Remove peel from garlic pods and trim edges of green chilies. Grind garlic cloves and green chili in small mixie jar to coarse paste.
  • Heat 1/4 oil Oil in kadai. Drain eggplant pieces from salt water and squueze with your hands to remove any excess water. Then fry egg plant pieces in kadai for about 5 min on medium flame. This helps in Eggplant pieces retaining their color and shape with out getting mushy in the curry. Eggplant pieces become tender, take them out of oil and transfer them into a plate and keep aside.

Method:

  1. Heat the same kadai that is used to fry eggplants. There will be some oil in it already. Add cumin seeds, mustard seeds. Once mustard splutters add roughly ground fenugreek seeds. 
  2. Add chopped onions and ginger slices and saute well with tempering. Add turmeric powder and keep the flame to medium to low, allowing onions to saute and caramelize.
  3. Now add ground garlic and green chili paste to pan. saute for 5 min. Now, Add tomato pieces or grated puree to pan and mix everything very well. Add red chili powder and let the curry simmer. The curry comes together becoming thick. 
  4. Now add fried eggplants to curry and mix with onion & tomato masala. Close the lid and let it cook covered for 5 min.
  5. Open the lid and increase flame to medium to high, cook uncovered until curry comes together. Now add Coriander powder and salt, mix well with curry. 
  6. Cook on high for couple of minutes, then switch off the stove. Transfer curry to serving bowl and garnish with Cilantro. 

Notes:
  • Good thing about this curry is you can use any chunky variety of Brinjal/Eggplant. American style Eggplant or Italian Eggplant will be perfect for this recipe. 
  • This recipe calls for large amount of oil compare to any typical curry, don't skim on Oil that will discount the taste. 
  • Fenugreek is another secret ingredient that enhances the flavor greatly for this curry. Make sure you add right amount and grind seeds coarsely in hand mortar while adding them to tempering. Fenugreek is bitter in taste, use it sparingly.
  • Garlic is star ingredient in this curry, used in large amount and the reason for bold flavors in this curry. If you can't use Garlic for religious purposes, unfortunately there is no alternative to replace garlic in this curry. However this Eggplant Tomato Curry should be your go to recipe.

Ulli Kaaram Gutti Vankaya ~ Baby Eggplant with Onion Paprika Spices

The name 'Gutti Vankaya' itself makes my mouth water! I love this vegetable for two reasons, one it twists so well for all the different variations you try with it, two this is the only vegetable got the privilege to be pictured as romantic vegetable in our Telugu Literacy! I have tried several Gutti Vankaya recipes so far, but still my quest doesn't stop and I keep exploring more recipes with this vegetable. Today I am sharing this recipe, which is quite popular in Andhra region and this recipe will be cherished by non-veg lovers due to onion and other masala ingredients that are used. In this recipe, baby eggplants are stuffed with onion, green chili, red chili spices and simmered on low to medium heat until all the egg plants are cooked thoroughly.  The best taste of his dish comes with only when it served with hot white rice. Here is the recipe, njoy!




Ingredients:
Baby Eggplants (tender) - 12
Oil - 3 Tbsp
Cinnamon - 1 inch stick
Clove - 2
Cumin Seeds - 1 tsp

Ulli Kaaram Masala:
Onion - 2 medium
Green Chili - 3
Cilantro - 1/4 cup
Ginger - 1 inch stick
Garlic - 4 cloves
Tamarind - 1 Tbsp
Red Chili Powder - 1 Tbsp
Coriander Powder - 1 tsp
Garam Masala Powder - 1 tsp





Method:

  1. Grind Onion, Green Chili, Cilantro, Ginger, Garlic and Tamarind in a small mixie jar and blend into coarse paste. Now add red chili powder, coriander powder, garam masala powder to the onion paste and mix it well together and grind again until it becomes smooth paste. 
  2. Wash egg plants, trim the edges and make 4 slits at the bottom making sure they are still intact at the top. (keep the eggplants in water to avoid them from browning). Stuff eggplants with Ulli Kaaram Masala and keep them aside. 
  3. Take a wide pan and heat on stove on medium heat. Add Oil, once oil is hot, add cinnamon, clove and cumin seeds. As cumin start spluttering add stuffed eggplants to pan gently one-by-one. Keep them separate from each other allowing eggplants to be cooked on all sides. Keep rotating eggplants gently on all sides and saute them for 5 min. Now add remaining Onion Masala paste to pan and distribute evenly. Cover the lid, reduce the heat to low and simmer for at least 15 to 20 min. 
  4. After 20 min, remove lid and you notice egg plants are fully cooked becoming tender and masala comes together. Increase heat to medium to high and cook for another 10 min for all the gravy to come thick and together. 
  5. Switch off the stove and transfer Stuffed Brinjals to serving bowl and serve hot with White Rice.

Vankaya Tomato Curry with Peanut and Sesame Masala

Today I have tried Vankaya Tomato Curry recipe from Vah Reh Vah site, this is so different than my usual recipe and came out with a special flavor. Peanut and Sesame masala added very creamy flavor to this curry and frying the eggplant first makes the eggplant look separate from gravy ( than getting mixed up). Original recipe fries the eggplant, I altered the recipe to cut down the deep frying and shallow fried the eggplants. This recipe used more Oil than my usual recipe, I bet, the taste comes from this extra oil. Here is the recipe, Njoy!


Ingredients:
Vankaya - 3 ( Medium Long Philippine Eggplant)
Onion - 1
Green Chili  - 2
Tomato - 3
Red Chili - 2
Urad Dal - 1 tsp
Chana Dal - 1 tsp
Cumin Seeds - 1/2 tsp
Mustard Seeds - 1/2 tsp
Curry Leaves - 5
Turmeric Powder - 1 tsp
Salt - 1 tsp
Red Chili Powder - 1/2 tsp
Coriander Powder - 1/2 tsp
Oil - 3 Tbsp
Cilantro - 1 Tbsp

Masala:
Peanuts - 2 Tbsp
Sesame Seeds - 1 Tbsp

Preparatory Steps:
  • Dry Roast Peanuts in a small non-stick pan for 2 min. Switch off the heat, in the same pan add sesame seeds so that they can get roasted while the pan is still hot for 1 min. Take it off from the heat and let it cool, transfer this to small mixie jar and grind it into fine powder and keep it aside. 
  • Chop Onions, Tomatoes into small cubes. 
  • Remove the stems of Eggplant and chop into medium size cubes. Heat 2 Tbsp of Oil in a medium size non-stick pan, once the oil is hot, add Eggplant Cubes to the Pan and saute them for 3 to 5 min until the eggplants becomes tender with out getting mushed up ( or loosing their shape). 
Method:
  1. Heat 1 Tbsp of oil in the heavy bottom pan. Add red chili, chana dal, urad dal, as lentils starts browning, add cumin seeds, mustard seeds and curry leaves. 
  2. Add chopped green chili and onions to the tempering. Add 1 tsp of turmeric powder to onions and saute the onions for 5 min until the raw smell goes away. Add chopped tomato cubes to the onion mixture and mix well; close the lid and cook for 5 min. By this time, tomatoes comes together and becomes like gravy. Now add red chili powder and coriander powder to tomato gravy and mix well into the gravy. 
  3. Add sauteed eggplant pieces to gravy and coat with gravy. Now add Peanut and Sesame masala to the gravy, mix it into gravy and cook for 5 min. Top with Cilantro, switch off the stove. Leave the curry in pan for 5 min and then transfer it to serving bowl and serve  with hot white rice. 

Tips:
  • For more authentic taste you can grind the peanuts and sesame powder in mortar & pestle by hand than using mixie/grinder.  Sesame masala adds lot of flavor to this curry and making it delicious. 
  • Frying the eggplants up front keeps their shape to be remained with out getting mushed up, even they dropped into gravy. so don't mix often with spatula while frying the eggplants.
  • Use Juicy and Cluster tomatoes to make this gravy.

Vankaya Vepudu w/ Kobbari Velluli Masala ~ Eggplant Fry w/ Garlic & Coconut Spices

How many ever times i try Vankaya Vepudu won't get the same consistency as I used to get in India. Of course the Indian Eggplants are very tender and has less water compare to the Eggplants we get here in States. I have tried, Chinese Eggplant, Japanese Eggplant, Thai Eggplant but no luck so far. So Today I got Philippine Eggplants from Taj Groceries to try my luck with different variety of Eggplant and then, BINGO!  So if you wanna Vankaya Vepudu like back at Home ( India) then Phiippine Eggplant is the one you should look for in United States! Today I have tried Vankaya Vepudu with Coconut, Garlic and Green Chili Masala (freshly made), it tasted absolutely delicious when served with White Rice. Here is the recipe, Njoy!



Ingredients:
Philippine Eggplants - 3
Onion - 1/4 quarter ( White onion)
Dry Red Chili - 2
Chana Dal - 1 tsp
Urad Dal - 1 tsp
Cumin Seeds - 1/2 tsp
Mustard Seeds - 1 tsp
Curry Leaves - 1 stem or 5 to 6 leaves
salt - 1 tsp
Coriander Powder - 1 tsp
Oil - 3 Tbsp
Cilantro - 1 Tbsp for Garnish

Masala:
Fresh Coconut - 1/4 cup
Garlic Cloves - 4
Green Chili - 2

Preparatory Steps:
  • First chop Onion into thin slices length wise to match with eggplant pieces.
  • Wash and pat dry Eggplants, remove the stem and cut into 3 sections width wise and cut each piece into long thin slices length wise.
  • Grind Fresh Coconut ( chop into small pieces), Peeled Garlic Cloves and Green Chili in a small mixie jar until everything is combined and get powdered consistency. this will be little wet but shouldn't become like paste. 
Method:
  1. Heat non-stick pan and add Oil. Once the oil is hot add Red Chili, followed by Chana Dal, Urad Dal. As lentils brown add cumin seeds and mustard seeds, as mustards start spluttering add Curry Leaves. 
  2. Add onion slices to the pan and mix with tempering, saute for 2 min until onions are wilted.
  3. Add Eggplant slices to the pan and mix well with onions and keep the flame in sim and saute for 5 min. Add salt and coriander powder and mix well until eggplants are coated with spices. Saute on low heat for another 5 min. 
  4. Now you notice eggplants are fried and wilted to half, now add the Coconut & Garlic Masala powder to non-stick pan and mix well with eggplants pieces until well combined. Now increase the heat o medium high and saute on high for another 5 min or until eggplant pieces are fully cooked.
  5. Taste and adjust salt or any seasoning. Top with Cilantro and switch off the stove, leave the pan on stove for 5 minutes for the flavors to settle. Now transfer to serving bowl and serve immediately with White Rice and enjoy the delicious flavors! 

Tips:
  • Add 1 tsp of salt to 1 cup of luke warm water and add eggplant pieces to this water in a bowl. This stops the eggplant from becoming black. 
  • When you are adding the eggplants to pan, squeuze the eggplants to remove any excess water and add to pan. This tip helps the eggplant fry to make little dry. 
  • I usually won't add red chili powder as this masala is subtle and loaded with green chili spicy flavor. If you want more spicy version or your green chili are not that spicy, then you can add 1/2 tsp Red Chili Powder in step 3 along with salt.

Masala Gutti Vankaya with Graffiti Eggplant

Today at Taj Groceries these Graffiti Eggplants caught my eye. I have never tried these before, so I picked around dozen tender eggplants and got home. And the next thing happened is this simple Masala Gutti Vankaya in my kitchen! This recipe is totally made up by me and done in pressure cooker, saves tons of time as this is shortcut to Gutti Vankaya curry which is usually a lengthy process to make. Here is the recipe, Njoy!


 Ingredients:
Graffiti Eggplant - 10
Cumin Seeds - 1 tsp
Onion - 1
Tomato - 1
Green Chili - 2
Ginger Garlic Paste - 1 Tbsp
Salt - 1 tsp
Garam Masala Powder - 1/2 tsp
Oil - 2 Tbsp
Cilantro - 1 Tbsp

Spice Powder:
Red Chili Powder - 1/2 tsp
Coriander Powder - 1/2 tsp
Rice Flour - 2 Tbsp




Preparatory Steps:
  1. Mix all the ingredients under Spice Powder section in a small bowl and keep it dry.
  2. Wash Eggplants and remove the stem.  Make a slit into 4 slices but they need to be intact at the top. 
  3. Rub Eggplants with 1 Tbsp of Oil and dust with spice powder mixture all around. 
  4. Sauté Eggplants in the non-stick pan for 10 min, turning all over so that the eggplants gets soft with out changing their color .
Method:

  1. Take non-stick pressure cooker and add remaining 1 Tbsp Oil to it. Once the oil is hot add cumin seeds, as they splutter add Ginger Garlic Paste. 
  2. Add green chili, chopped onions to the pan and mix them well with ginger garlic paste. Close the lid and let the onion mixture cook on low heat for 5 min. 
  3. Now add Tomato pieces to the onion mixture and let them simmer for 10 min ( until tomato pieces are mashed up). Add 1 tsp of salt to the tomato onion mixture and mix it well. 
  4. Now add the sautéed spiced egg plants to the pan. Add any remaining spice powder mix to the pan. Mix Eggplants with Tomato & onion mixture.  Add garam masala powder to it.
  5. Close the lid tight and cook on pressure for 2 whistles and switch off the stove. 
  6. After 15 min, Take the weight off and remove the lid. Don't mix it up Eggplants will be tender. Taste and adjust the seasonings, add cilantro to gravy. Switch off the stove.
  7. Transfer the curry to serving bowl carefully and serve with Hot White Rice immediately.

Gutti Podugu Vankaya Vepudu ~ Green Eggplant Stir Fry

Today at Taj Groceries I have come across these beautiful tender long green eggplants, usually this type of long and thin eggplants are very rare in states. I love this variety from my native Andhra, except those come in beautiful purple color. My Mom always makes the simple stir-fry with that variety of eggplant ( Vankaya Vepudu), that is the best and one of my favorite. So today cherishing that recipe in the memory lane of my childhood I am composing this simple Eggplant Stir-fry with slight variation of making it looking like stuffed which makes it look super fancy on your dinner table! Enjoy!

Gutti Podugu Vankaya Vepudu
Ingredients:
Long Eggplants - 10 ( Podugu Vankaya)
Onion - 1 medium
Green Chili - 2
Coriander Leaves - 2 Tbsp
Salt - 1 tsp
Red Chili Powder - 1/2 tsp
Coriander Powder - 1 tsp
Rice Flour - 1 Tbsp
Oil - 1 Tbsp

Tempering:
Oil - 1 Tbsp
Whole Red Chili - 2
Chana Dal - 1 tsp
Urad Dal - 1 tsp
Cumin Seeds - 1 tsp
Mustard Seeds - 1 tsp
Turmeric powder - 1 tsp
Curry Leaves -  10 ( or 2 stems)

Preparatory Steps:
  • Mix 1/2 tsp salt, 1/2 tsp of red chili powder and 1/2 tsp of coriander powder and 1 Tbsp of Rice flour in a small bowl and keep it aside.
  • Wash and pat dry eggplants. Shorten the stems and make 4 slits by keeping it intact at the stem end. Rub the spice mixture inside and outside all over eggplants carefully making sure the eggplants are still intact at the stem.
Method:
  1. Heat the non-stick pan, add 1 Tbsp Oil. Once the oil is hot, add red chili, followed by Chana Dal, Urad Dal, Cumin seeds. Sauté for 1 min until the lentil are turning into golden color, then add mustard seeds and turmeric powder. As mustards starts spluttering, add curry leaves and reduce the heat to low. That completes our tempering.
  2. Add chopped Green Chili and Onion to the pan and mix with tempering.  Close the lid and let onions cook until their raw smell is gone. Add 1/2 tsp of salt and 1/2 tsp coriander powder  to the onion slices and mix it well. 
  3. Now add the spice covered eggplants to the pan one at a time making sure each one is touching the pan. 
  4. Cook on low heat for 5 min, and turn each eggplant to the other side holding gently at their stems. Cook on other side for 5 more minutes. Now close the lid and let the eggplants simmer for few more minutes. Now add 2 Tbsp of coriander leaves to eggplants in the pan. Cook for 2 more minutes.
  5. You notice eggplants are cooked on all sides and becoming very soft and changing their color.
  6. Turn off the heat and keep them in the pan for 10 more minutes and after that transfer them to the wide bowl and serve with hot rice. The taste and flavor of this simple stir-fry will take you out of the world.

Notes:
  • For this stir-fry, the eggplants should be very tender and thin.
  • you need to cook these on low heat, otherwise eggplants can easily burnt as these cook very fast.

Thai White Eggplant Stir Fry

One day at Sprouts I have spotted cute round white Thai Baby Eggplants. I have seen several varieties  of Eggplant before but this one is totally new to me. These resemble more like Green Striped Baby Eggplants that we get in some parts of Andhra, in India. So I have picked up these cute baby eggplants with no intention what to make with these. I have used Eggplants before in several Thai dishes esp in Green Curry, where Eggplant is paired with Ginger and Green Chilli, to enhance the flavor of it. My mom makes the Vankaya Fry ( Eggplant Stir-Fry) with Ginger, Green Chilli and Grated Coconut Combination, That tastes superb...! My all time favorite is Eggplant Stir fry made with Garlic, CuminSeeds, Coconut Powder seasonings. So Today I set my mind to try some Thai Dish with these eggplants, I have searched several recipes but nothing seemed exciting, as most of those are either gravy curries or mixed with meat. So I came up with my own Fusion recipe, by mixing Indian and Thai flavors into it. And the end result is Superb and Delicious, Here it is Enjoy!

White Thai Eggplant Stir-Fry

Ingredients:
White Thai Baby Eggplant - 6
White Onion - 1/2 medium
salt - 1 tsp
Oil - 1 Tbsp + 1 tsp
Cilantro  - 1 Tbsp ( Coriander Leaves)

Spicy Seasoning:
Ginger - 1/2 inch
Green Chili - 2 medium
Coriander Seeds - 1 tsp
Coconut Powder - 2 tbsp

Preparatory Steps:
  • These thai eggplants will have lot of seeds in it, so you need to saute them in oil first to make them soft. Trim the stem edge and Cut the Eggplant into round circle and saute them in 1 Tbsp of Oil and keep them aside.
  • Grind the ingredients under Spicy Seasoning into fine paste in a small mixie jar. 

Method:
  1. Take the same nonstick pan that you have sauteed eggplants before, add 1 tsp oil to it. Once the oil is hot, add thinly sliced onions to it, saute until onions become translucent.
  2. Now add the sauteed Eggplant rounds to the pan. Once the eggplant slices are mixed with onions, add some salt to it and leave it on medium flame for 5 min. 
  3. Now add the spicy seasoning to the pan and mix it well gently, and stir fry for another 5 min until the everything is well combined and cooked. 
  4. Taste and adjust salt and Finally top with some cilantro on top and switch off the stove.
  5. Transfer to serving bowl and serve immediately with hot white rice.

Notes:
  • You can cut the eggplants in any shape, but cutting in round shape here makes the seeds intact with out getting them out loose into stir-fry.
  • Sauteing the eggplant before makes them soft, this is critical step, other wise you don't get the nice flavor and texture to your stir fry.

Bagara Baingan ~ Gutti Vankaya in Hydarabadi Style

Okay, I am bringing again one more recipe with my favorite vegetable. I think that doesn't need any more Introduction, by now you know that is Vankaya or Eggplant or Baingan :-). There are already several Gutti Vankaya Recipes piled up on my space, but there is no limit to make several variations with this wonderful vegetable. I think the variations of masalas or stuffing used for this vegetable varies from region to region, that is based on what is the most abundant ingredient or spice that will grow or available in that region. So in Andhra side this recipe is made with the stuffing of lentil and curry powders or stuffed with onion, ginger and garlic paste. But in Hyderabad side as Peanuts are abundant, this recipe will be made with Peanut, Sesame Seeds and Tamarind combination. In this style, the baby eggplants need not be stuffed, but they will be slightly fried first and then coated with Peanut and Sesame powder and then simmered on slow heat in tamarind gravy along with red chili powder and coriander powder. This is not super spicy, little mild compare to Andhra style Gutti Vankaya and goes very well with Roti and Pulao. Here is the recipe, Njoy!



Ingredients:
Baby Eggplants - 10
Onion - 1 medium
Curry Leaves - 5
Cumin Seeds - 1 tsp
Ginger Garlic Paste - 1 Tbsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tsp
Red Chili Powder - 1 tsp
salt - 1 tsp
Peanuts - 2 Tbsp
Sesame Seeds - 2 Tbsp
Coconut Powder  - 2 Tbsp
Tamarind - 1 Tbsp
Oil - 2 Tbsp
Cilantro - for Garnish

*serves - 4 people

Preparatory Steps:

  • Dry Roast the Sesame Seeds and Peanuts separately in the non-stick pan. Once they are cooled off grind in the small mixie jar along with Coconut Powder; first grind into fine powder. Add 2 Tbsp water and grind into smooth paste.
  • Soak the Tamarind in warm water and extract the tamarind juice and set aside
  • Trim the edges on Egg Plants and make 4 slits and keep them salted water to avoid any blackening.

Method:

  1. Heat the non stick pan or heavy bottomed vessel. I have used my non-stick pressure pan. Add 2 Tbsp of oil.
  2. First fry the egg plants for 5 min in the non-stick pan, until they become slightly soft but still retain their shape. Take them out and keep them on a plate aside.
  3. In the same pan, Add cumin seeds and curry leaves,. once they splutter, add finely chopped onions and saute them well. Add ginger garlic paste and saute for 5 min or until the raw smell goes away. 
  4. Now add the ground peanut,sesame, coconut paste to the pan and mix well. Add salt, turmeric powder, red chili powder and coriander powder and mix it well. let it simmer for few minutes. 
  5. Add tamarind juice to the pan and mix it well. Add some more water and let the gravy simmer on slow heat for 5 minutes. Now taste and adjust the salt and seasonings accordingly.
  6. Now add the brinjals to the gravy, loosely close the lid and let it simmer for 10 to 15 minutes on slow heat. Once the brinjals become soft and gravy comes together, top with cilantro; switch off the stove and transfer to serving bowl. 

Take a Close Look!
This tastes fantastic with mild Veg Pulao or Coconut Milk Pulao. Hmmm Yummm!!!! now my mouth waters, what about you?

Tips:

  • Keep stirring while the gravy is simmering so that gravy will not stick to the bottom. 
  • Peanut Paste can easily become thick, add water while it is simmering to that you will get gravy like consistency.

Gutti Vankaya Dry Fry with Sesame & Peanut Filling ( Stuffed Aubergine Fry) { Quick Version }

Gutti Vankaya - the name itself makes my mouth water. I have mentioned several times how much i heart this cute little purple vegetable ( sometimes known as King of vegetables with it's Crown stem on top), I love this vegetable for a reason, you can make several variations with it, Pachadi, Fry, Curry, Rice, Stuffed, Stew, Baked, Roasted, Deep Fry and even with Yogurt. In every form it molds uniquely giving a special taste in every variation it is involved in.



Gutti Vankaya, how much ever it teases our taste buds we got to admit, it is time and effort taking with the lenghty process and several ingredients that are involved in typical traditional recipe. But today I have a good news for the rush time moms in the kitchen, you can get the same super taste with in minutes with this quick stuffing recipe. so save those hours to eat than cook! :-) Today I have tried this recipe with Aubergines ( Small Baby Eggplants), they looked little thin, long and tender compare to our normal Indian Eggplants. So for this recipe, make sure you always get very tender Egg Plants ( that has almost no seeds in it), that is the Key for the success behind this recipe. So here is the recipe, Njoy!

small baby eggplants / Aubergines
Ingredients:
Baby Aubergine / Eggplant - 10
Small Onion - 1/2
Green Chili - 1
Cumin Seeds - 1/2 tsp
Mustard Seeds - 1/2 tsp
Turmeric powder - 1/2 tsp
Oil -  2 Tbsp
Salt - 1/2 tsp
Coriander powder - 1 tsp
Curry Leaves - 4 ( optional)
Cilantro - Garnish

Stuffing:
Peanuts - 3 Tbsp
Sesame Seeds - 2 Tbsp
Cilantro -  2 Tbsp
Salt - 1/2 tsp

Preparatory Steps:
Roast Peanuts and Sesame Seeds separately. Sesame Seeds gets roasted quickly so don't mix them with peanuts while roasting. Once they cool off, add peanuts, sesame seeds in small mixie jar or blender grind it coarsely. Add Cilantro and salt grind it until it becomes like fine powder.

Wash eggplants, make slits into 4 quarters and drop them in salt water to avoid any blackening. Once all the eggplants are ready, take each egg plant and stuff the peanut and sesame stuffing in it, tighten it in your palm so that slits will close and seal the stuffing.




Method:

  1. Take a non-stick pan and add  2 Tbsp oil to it. Once the oil is hot add cumin seeds and mustard seeds. As they start spluttering add curry leaves.
  2. Add finely chopped green chili and onions to the pan and saute them for 2 min. Now add turmeric powder, salt and coriander powder and mix it well. 
  3. Add stuffed eggplants to the pan and mix it with onion mixture. Turn the heat to medium low and close the lid and let it cook for 10 min. 
  4. Now open lid and check the tenderness of eggplants, turn the eggplant to other side to allow to cook on all sides and add any remaining peanut and sesame stuffing powder to the non-stick pan. Close the lid and cook another 10 min. 
  5. Open the lid and now the eggplants must be fully cooked, looking tender and about to start getting roasted. Taste and adjust salt or other seasonings. Garnish with Cilantro and turn off the heat. Let it stand there for 5 min. Serve hot with white rice to get the best flavor out of it.

Vankaya (Brinjal) Pulao ( Under 30 Minutes)

Vankaya (Brinjal) Pulao is a spicy rice dish cooked with the Brinjal ( Vankaya / Egg Plant) and spices under pressure. This is a One Pot Meal which will be handy for your Friday Dinners or Saturday Suppers or Sunday Picnics. This recipe uses the Homemade Vangee Bath Masala that I have posted recently. My version of Vangee Bath Masala is purely made satvivk ( the spice powder made with Lentils), so I have added some spices cinnamon, clove to add some non-veggish kick to this rice and added some grated coconut to give that mild sweetness to cool off those spices. I strongly suggest to serve this rice with cool raita. If you have this Vangee Bath Masala handy then you can make this rice in less than 30 minutes making your Dinner Special and different from routine. I will take the pride in creating this new recipe which is  inspired by the recipe of Vangee Bath but made completely differently.

Vankaya Pulao

You all know by now, I am a big fan of Vankaya ( Brinjal) and I love any dish that's made with it, My mom is also huge fan of this wonderful vegetable because one can make several varieties and cook this veggie in many forms.  ( may be I inherited the like for this veggie from my mommy). But this rice dish got several praises from hubby too and he always gets surprised how i make these special meal in minutes ( esp after i return from work). Well I have revealed my secret here now. :-). I would say this is a complete winner recipe in my family. With out any due let me share the recipe, Njoy!


Ingredients:
Onion - 1/2 medium
Green Chili - 3
Tomato - 1 ( roma)
Baby Egg Plant - 8 ( or japaneese egg plant)
Cinnamon - 2 ( 1 inch sticks)
Clove - 3
cumin seeds - 1 tsp
Ginger Garlic Paste - 1 tsp
salt - 1 tsp
Vangee Bath Masala - 1 Tbsp
Dry Coconut Powder - 1 Tbsp
Coriander Leaves ( Cilantro) - 1/4 cup
Rice (raw) - 1 cup
Water - 2 cups
Oil - 1 Tbsp

*yields - 2 servings

Preparatory Steps:
  • Chop the Onions, Tomato and Green Chili in length wise. Chop the baby egg plants into 4 pieces. 
  • Wash the rice and drain it in colander and let it completely dry. 
Method:
  1. Heat the oil in Non-stick Pressure Pan Cooker. Once the oil is hot add Cinnamon, Clove, Cumin seeds and saute for 1 min. 
  2. Add chopped Green Chili, Onion to the pan and saute for 1 min. Onions will become translucent, then add ginger garlic paste and mix it with onions. Add Chopped Tomato now. and cook for 1 min.
  3. Add chopped Brinjal pieces to the pan, mix it with onion mixture and close the lid ( loosely) and let it cook for 2 to 3 min until egg plant becomes soft, now add the salt, mix it and cook for 2 more minutes.
  4. Now add rice to the pan mix it well, with veggies. Add Cilantro to the pan now. 
  5. Add Vangee Bath Masala Powder, and Dry Coconut powder and mix it thoroughly with rice and veggies. ( make sure the rice is coated with spices).
  6. Add 2 cups of water to the pan. Close the lid to pressure pan and cook it for 2 whistles. ( about 10 -15 min).
  7. Once it's cool off open the lid and fluff up the rice with spatula and taste and adjust the salt accordingly.
Transfer to serving bowl and server hot with cool raita on the side. 

Notes:
  • Chop the eggplant ( Brinjal) in medium size. Don't chop them into small, as we pressure cooker it becomes very soft and mushy. 
  • Roasting the rice with masalas in the pan is very critical and after the rice is cooked, it will be flavorful as the rice is infused with all the masalas before.

Gutti Vankaya Curry (for Non Veg Lovers)

As you all know by now that brinjal (or baingan) is my all-time favorite vegetable. esp I fall for this stuffed baby eggplants curry (gutti vankaya) any time. When my mom makes it i always wipe out the whole dish by myself, that's how much i love it. When i was a kid mom used to make sure that this curry is on the menu for my special birthday lunch. Even now-a-days during my visit to India she makes this curry several times during my short stay. Enough said about my love for this cute baby vegetable!!! Coming to the recipe,  there are several versions of Gutti Vankaya curry. In today's recipe we use lot of onions, garlic and garam masala which are common in any non veg curry. Hence i call it a Nonnveg Lovers version, because most of non-vegetarians love this version. (Don't get confuse by the title, we don't use any meat in this recipe!!!) Here is the recipe, Njoy!

Gutti Vankaya Curry (for Non Veg Lovers)


Ingredients:
Baby Eggplants - 6
Onion - 2 small
tomato - 1
green chili - 2
ginger garlic paste - 1 tsp
salt - 2 tsp
turmeric powder - 1/2 tsp
coriander powder - 1 tsp
red chili powder - 1/2 tsp
coriander leaves - 1/3 cup
Oil - 2 Tbsp

cashew nuts - 6
poppy seeds - 1 tsp
red chili - 1


cardamon - 1
clove - 2
cinnamon - 2



Preparatory Steps:

  • Chop 1 onion into big pieces and grind into smooth paste in the grinder or blender.
  • Roast the red chili and poppy seeds in the pan. Cool it off, and grind it into smooth paste along with cashew nuts. Keep this paste aside.
Onion Stuffing:
Heat 1 tbsp oil in the pan, once the oil is hot add the onion paste, ginger garlic paste, add 1 tsp of salt, turmeric powder and half of the coriander leaves and cook until it comes like thick paste.



Method:

  1. Cut the baby eggplants into 4 quarters (make slits). Fill the onion stuffing in the baby egg plant slits.
  2. Heat the remaining oil in the non-stick pan, add cardamom, clove and cinnamon. Once the nice aroma comes, add the chopped onions and green chili. Let the oil separate from onions. Add the Stuffed Eggplants to the pan and fry them on medium until they are cooked well on out side. Now add the remaining onion paste and add chopped tomatoes.
  3. Add the salt, red chili powder, coriander powder and close the lid. Let the baby egg plants cook with the masala for 5 min.  until they are soft inside.
  4. Now add the cashew and poppy seeds paste to the gravy and close the lid and cook for another 5 min. 
  5. Taste and adjust the seasonings, top with remaining cilantro and close the lid. Switch off the stove, but leave the pan on the stove for 5 min. 



Serve with white rice and enjoy the heavenliness! Hmm Yumm Yummm YumM!

Tips:

  • This goes very well with any mild flavored rice like Pualo or Jeera Rice.
  • As all the masalas we used in this curry are used in chicken curry, non veg lovers will love this version for sure.

Brinjal comes in Bengali Style

If I have not told you before, Brinjal / Baingan or Baby Egg Plant is my favorite vegetable. All of my friends from school and college know about my passion towards this vegetable, I think the flavor of this vegetable in any form, Chutney, Fry, Curry and Rice is fabulous and mesmerizes me. I always talk about this vegetable which inspires some or bore some, but all of my friends will remember me when ever they eat or cook Brinjal.. :-) My mom makes several varieties with this brinjal/baingan ( she is a fond of this vegetable too, may be that's how I got it form her genes).

Brinjal Comes in Bengali Style
One day when I was browsing Vah Reh Vah ( my fav online cookery show), I have come across this recipe, which calls this as a Bengali dish, not sure in Bengal they get this type of Eggplants than our regular baingan or brinjal. But this seemed very simple, easy recipe and can be made with Eggplant which are abundant here ( in USA) and looks like a fancy dish (than our routine baingan curries or stir-fries). and then I thought I got to give it a try.  And one fine day, I made it happen and I am so happy with the end result and the easiness of this recipe, since then I have made this dish several times which substitutes for the healthy side. Here is the recipe, Njoy!



Ingredients:
Eggplant - 1
Red Chili Powder -1 tsp
turmeric powder - 1/2 tsp
salt  - 1 tsp
coriander powder  - 1/2 tsp
rice flour  - 1/3 cup (or as needed)
Vegetable Oil ( or Canola Oil ) - 2 Tbsp ( for shallow frying)

Preparatory Steps:
  • Wash and Pat dry the Eggplant. Slice horizontally into 1/2 inch thick slices. 
  • Place these rounds in slated water for 5 - 10 min to avoid dis-coloring or turning into black. Drain these and pat dry the rounds and keep aside.
Method:
  1. In a small bowl mix the salt, red chili powder, turmeric powder and coriander powder.  Coat the egg plant rounds with this spice mixture and marinate for 5-7 minutes.
  2. Heat oil in a pan. Take rice flour in a plate. Coat each slice with rice flour on both sides. ( do not coat on the side edges leaving the skin open)
  3. Now pan fry these rounds till crisp and golden brown on both sides.
  4. Serve hot with rice or roti along with some raita on the side.

You have to add at least 2 foods form purple group to your plate per week.

I want to share about a new addition to my kitchen, Today I have bought my Pure Komachi 2 series blades from Costco, after using it's Santoku knife I am very much impressed and now bought the whole set.  As I have never owned proper knives as reluctant to spend money on the knives that I may not use, but today tempted by these bright colors and VJ fully supported me to buy these as he thought my kitchen totally deserve these. :-) Now I can't wait to use these variety of blades as the professional chefs do. ;-) Go and Claim yours....Have Fun!
