Parmesan Purple Potatoes

Previously I have tried several Purple Foods like Purple Cabbage, Purple Cauliflower and this weekend these Purple Potatoes at Sprouts caught my eye. When I bought them I didn't have any idea what to make with, I thought at least in the worst case I could use them in potato recipes alternative to regular potatoes. I have tried Potato and Cauliflower subji, but I didn't really noticed the difference in taste expect the color of curry turned into purple. Next day  I wanted to try something special and just come up with this 'Parmesan Purple Potatoes' recipe. The recipe very simple, and similar to any baked potatoes recipe but with touch of Italian herbs and cheese with a small dose of spices to make them savory. Here is the recipe, Njoy!



Ingredients:
Purple Potatoes - 6
Italian Dry Basil - 1 tsp
Olive Oil - 2 Tbsp
Crushed Red Pepper - 1/2 tsp
Kosher Salt - 1 tsp
Black Pepper - 1/2 tsp ( freshly ground)
Cajun Seasoning - 1/2 tsp
Parmesan Cheese - 2 Tbsp

Method:

  1. Heat Oven to 350 F / 180C.
  2. Take a small bowl and add Olive Oil and mix all the spices listed above, along with 1 Tbsp Parmesan cheese.
  3. Wash and pat dry potatoes, chop them ( along with skin) into small cubes.
  4. Place the Potatoes into 1 Gallon Ziplock cover. Pour the Olive Oil and spices into Ziplock and cover it. Shake the bag very well until the potatoes are covered with spices. ( My Little Helpers come in handy to do this step).
  5. Take a Baking Sheet and spread them in single layer.
  6. Bake Potatoes in the oven for 15 to 20 min ( based on your oven temperature)
  7. Take them out of oven, transfer them to platter and sprinkle remaining Parmesan cheese.
These are very addictive, I warn you, if you start eating these, you won't stop until you finish all of them. :-)

Spices Used

Place the Potatoes and spices in Ziplock and shake well.

Add Purple Color to your Plate with these Parmesan Purple Potatoes.


Tips:
  • Ask help from your Little Helpers for #4. They will be happy to assist you and they will be proud while eating them.
  • These cook faster than regular potatoes. Hence 15 min is enough for baking. 
  • While baking potatoes I always leave the skin on, it keeps the shape and texture good. Leaving the skin adds more fiber and adds taste to baked potatoes.
