Double Chocolate Marshmallow Cookies

During this recent Holiday Season I was just determined to make some new Cookies to add to my cookie recipe collection and to calm my kids holiday boredom. The result is the Teamwork for this 'Project Double Chocolate Marshmallow Cookies'. My kids had fun and I had little helpers, we had delicious cookies and best time spent together in our kitchen. Life is Good, couldn't ask more, Amen! Here is the recipe for you!



Ingredients:

Butter - 1 cup ( 2 sticks) ( You can use another 1/4 cup for extra deliciousness, but I am watching my calories)
Sugar - 1 cup
Brown Sugar - 1 cup
Eggs - 2 large
Vanilla Extract - 1 tsp
All Purpose Flour - 2 cups
Cocoa Powder - 3/4 cup ( Unsweetned)
Baking soda - 1 tsp
Salt - 1/2 tsp
Chocolate Chips - 1 cup ( semi-sweet)
Marshmallow bits - 1 cup ( small size)

Method:

  1. Pre-Heat Oven to 350 Degrees
  2. In a medium bowl add dry ingredients (APF, Baking Soda, Cocoa Powder, Salt), mix well and keep it aside. 
  3. In a large bowl add butter at room temperature ( if the butter is hard microwave for 30 sec to become soft). Cream Butter with White Sugar, Brown Sugar, add 2 large eggs, vanilla extract and whisk well together. 
  4. Add the dry ingredients to the wet mixture and make like a dough ( better to use hands while mixing)
  5. Finally add Chocolate Chips and Marshmallows to the dough and fold in well. 
  6. Drop the Tbsp heaps of dough on a prepared baking sheet 1 inch apart.  Bake them for 8 - 9 minutes. 
  7. Remove from oven and let them cool on a wire rack and transfer them to air tight container.

Notes:

  • I have used Sugar in the Raw instead of White Sugar, since I am not buying White Sugar any more. Because of the they are little light sweet than original ones, and perfect for our taste buds. 
  • Due to Marshmallows, they turned out even more chewy and gooey, Oh, my absolutely delicious.
