Oatmeal Paayasam (Under 15 Minutes)

I wish all my readers a Happy and Safe Deepavali (Festival of Lights)!!! Diwali is a significant festival in India where  everyone look forward to celebrate it with their family. The firecrackers will bring lot of fun to kids, and girls decorate the house with colorful Rangoli and array of Diyas. The tradition of this festival is to eat and share sweets in family and friends.
Oatmeal Paayasam

On this festive occasion,  I am sharing Oatmeal Paayasam sweet recipe with you. This recipe comes with a healthy twist of Oatmeal, to the routine sweet Paayasam. Usually I eat Oatmeal for breakfast as this is quick fix and suits my morning busy schedule. My mom insisted several times to try this Paayasam, as this is very simple and will be ready under 15 minutes. Today the recipe came handy, and I exactly followed my mom's instructions and to my surprise it is ready in 15 minutes with same great festive taste of regular Paayasam.  Usually VJ won't aah or ooh about my dishes, but when he goes for second serving means it's Superb :-). Here is the recipe, Njoy!



Ingredients:

Whole Milk - 1 1/2 cup
Water - 1/2 cup
(or 2% Milk - 2 cups)

Oatmeal - 1/2 cup
Water - 1/2 cup

Bellam (Gud) - 1/2 cup ( Brown Sugar)
White Sugar - 5 Tbsp
Ghee - 2 tsp
Cashew Nuts - 10 ( halved)
Dry Coconut Pieces - 1 Tbsp

Cardamom - 2



Method:
  1. Heat the heavy bottom pan ( I have used my new Prestige non-stick pressure pan). Mix the 1 1/2 cup milk and 1/2 cup water (or 2 cups of 2% milk) and add to the pan. 
  2. Let the milk boil on medium heat for 5 min. Meanwhile, add water to the oatmeal in a microwave safe bowl and heat it in mircowave for 2 min. 
  3. Now add grated Bellam ( Brownsugar) and white sugar to the milk. and keep stirring well so that it won't stick to the bottom (5 min) . Fry the Cashew nuts and dry coconut pieces in Ghee until they become golden color and keep it aside.
  4. Grind the cardamom in mortar with pastel, and add it to the boiling milk. Now add the cooked oatmeal to the milk and mix well so that it won't form into lumps.  Finally top with Cashew Nuts and Coconut pieces and turn off the heat.

Serve into bowls and eat when it is warm for best taste. Happy Diwali Once again, here I am passing this sweet bowl to you, enjoy!

Notes:
  • If you don't have Bellam or Brownsugar, you can replace with White Sugar, then total 1/2 cup white sugar can be added. Bellam gives nice color and flavor to the paayasam.
  • If you are concerned about the calories then you can use 2% milk, but I suggest trying this recipe with whole milk for better results.
