Roasted Red Pepper Hummus

I have made Basic Hummus before at Home but my quench for exploring other variations in making this Healthy Mediterranean Spread is not satisfied yet. I like Sabra Brand for Hummus and have tried several varieties of their Hummus, though Supremely Spicy Hummus is my favorite and I recommend for Spice Lovers, but Roasted Red Pepper Hummus got it's unique taste which is good for  people who are sensitive to spices. The roasting effect in this recipe adds a twist to the taste of Sweet Red Pepper and complements for Chick Peas taste while Olive Oil and a touch of Paprika enhances the whole look.  This goes very well with Pita Bread, French Bread, Stacy Pita Chips or even Tandoori Nan. Pick your favorite to spread this on or Dip in, Here is the recipe, Njoy!

Roasted Red Pepper Hummus
 Ingredients:
Red Bell Peppers - 2
Chick Peas - 1 can ( or 1 Cup)
Garlic - 2 clove
Red Chili - 1 whole
Olive Oil - 1/4 cup
Paprika - 1/2 tsp ( for garnish) ( optional)
salt - 1 tsp
Lemon - 1 medium ( or 1 Tbsp Lime Juice)

Equipment you Need: 
  • Baking Sheet
  • Oven
  • Food Processor or Small Mixie Jar and Mixie or Magic Bullet


How to Roast ( Charred) Red Peppers:
Take the stem and seeds out of pepper and Cut the Red Bell Peppers into Half. Arrange them on Baking Sheet skin side up. Keep them on top rack of oven in Broiled Mode  for 10 min. After 10 min, you will notice the skins get charred ( that's the indication) switch off the oven, take the peppers out and place them in a bowl and seal with plastic wrap. leave them there for 5 min. You do this for 2 reasons 1) Peppers will become soft as still getting cooked under the steam 2) you can peel the skin very easily.
After 5 min, peel the skin on pepper and chop them into small pieces. 

Method:
In a Food Processor (or small mixie jar), first grind the garlic and red whole chili together until they are crushed. Add lime juice and give it a Pulse. Add washed and drained chick peas to the food processor along with Olive Oil and pulse it on medium for 1 min. You will notice chick peas turn into paste, now add chopped roasted red peppers ( reserve some for garnishing) and salt and grind it all together.



Transfer this paste into serving plate and top with some roasted red pepper bites and sprinkle some more olive oil on top and add a dash of paprika for garnishing.  Now you serve it with Any french style bread or Pita Chips or Tandoori Nan Bites. Look how beautiful it looks...!
