Instant Brown Rice Dosa ~ Instant Indian Breakfast

These days quick 1 min video recipes are everywhere and they catch your eye easily, especially when they pop up on your facebook. One day I couldn't take off my eye from this instant dosa recipe made with leftover rice from Hebbar's Kitchen that popped up while I was on facebook. I have followed the exact recipe but replaced cooked white rice with cooked brown rice, Dosas turned out so crispy, kids and hubby loved it. When Dosa are hot from the griddle they are crisp, once they cooled off they are super soft and very tasty. After this experiment I am cooking brown rice a lot just to make this Dosa......, That's how much superb these Dosas are! Despite of healthy, 'Instant' is the part where I fall for this Dosa recipe! These Dosas are happening a lot in my kitchen at least once a week and definitely hands down and keeper recipe! Here is the recipe, Njoy!

Ingredients:
Cooked Brown Rice - 1 cup
Wheat flour - 1/2 cup
Rice Flour - 1 cup
Curd - 1/4 cup
Salt -  1/2 tsp
Baking soda - 1/2 tsp
Water - 1 1/2 cup ( adjust as needed)
Oil - for making dosa

Method:
  1. In a blender jar take Cooked Brown Rice, Wheat flour and Rice Flour, add 1 cup water. Blend until everything is combined and becomes smooth. ( i have used my indian mixie for grinding)
  2. Add curd and remaining water and blend one more time until you get smooth consistency.
  3. Transfer this batter to a wide bowl. Add salt and baking soda and combine everything well.
  4. If you need add 2 to 3 Tbsp water as need to make the batter runny or to get until typical dosa batter consistency. Leave this aside fro 15 min for the batter to ferment little bit.
  5. Heat Tawa or griddle, one it is hot, pour ladleful of dosa on tawa and spread it evenly in circular motion. after 1 min drizzle oil around dosa.
  6. When Dosa starts leaving the tawa, flip to other side and let it cook for 30 sec. Now again flip and fold to half or roll, transfer to serving plate.
  7. Serve these Dosa hot with Coconut or Peanut or Ginger Chutney.

Notes:
  • In this recipe sour curd is preferred as it aids in quick fermentation and to get crisp texture for your dosa.
  • Baking soda also helps in fermentation and will give nice texture to your dosa, if you are not inclined to it, you can totally skip it.
  • If you don't have brown rice, you can use regular cooked white rice.

Instant Oats Dosa

All of us know that Oats has good health benefits as it belongs to the complex carbs category. These days Oats acquired special place on our breakfast plates. It is proven at our home that consistent intake of Oats (in the morning breakfast) reduced Cholesterol levels  in our bodies. Since then I am determined to include Oats in our family breakfast in many forms. Oat Meal Porridge, Oat Meal Paayasam and Oats Upma are some of the varieties that I have tried in the past. Today oats are appearing in the form of Dosa which is All time South Indian favorite Breakfast, that no one can deny at the Table. My kids and Vj totally loved this breakfast and never noticed that this is actually the complex carb dosa, my favorite part is as it happens Instantaneously. Here is the recipe, Njoy!

Instant Oats Dosa
Ingredients:
Recipe Source: Padhu's Kitchen

Oats - 1 cup
Rice Flour - 2 Tbsp
Sooji Rava - 2 Tbsp
Buttermilk - 1/4 cup
Green Chili - 1 ( optional)
Coriander Leaves - 1 Tbsp ( chopped)
Cumin Seeds - 1 tsp
Black Pepper Powder - 1/4 tsp ( freshly ground)
Salt - according to taste
Oil - as needed to make dosa
Water - 1/2 cup or as needed

*yields: 4 to 6 dosas

Method:
  1. Dry roast the oats (for 2 min) in non-stick pan and let them cool for a bit. Oats should become brittle.
  2. Grind all ingredients together ( except oil) in mixie or blender to get fine batter consistency. You need to add water  while grinding in small quantities until it becomes like  batter. Let the batter sit for 15 min so that it gets fermented little bit.
  3. Heat Dosa Tawa ( or non-stick griddle) and pour 1 ladle of batter and spread around in circles. Add 1 tsp of oil around dosa and let it cook for 1 min on each side and fold into half, take it out from the pan.
  4. Repeat the same steps until you are done with the batter. Serve hot these Healthy Oats Dosas with Peanut chutney.
Look at that Crispy Texture!
Notes:
  • Green chili is optional here, if i serve to kids I will skip green chili.
  • Buttermilk is must and critical ingredient for this Dosa, which aids in speed up the fermenting process.
  • Sooji Rava gives nice crispy texture to Dosa.
  • These are best when served hot.
  • These won't last long, so make sure you make only enough batter for that day or for one-time use.

    Wholesome Breakfast Instantaneously!

Instant Soft Tomato Rava Dosa

By looking at the title you must be thinking what in the opposite World am I in? Cause, usually Rava Dosa is made Crispy and with Onions. There is a story behind this innovation. One day, when my son woke up, I have asked him, what he would like to eat?, as if I am prepared with every possible breakfast. Instantly he said, he wants Dosa, with excitement. But I am not ready with Dosa Batter. Then this Instant Rava Dosa was rescue recipe to me, to make it kid friendly (I made it soft) and to sneak in some vegetables, I have altered the basic Rava Dosa recipe. That's how this Soft Tomato Rava Dosa was created.

Soft Tomato Rava Dosa
Soft Tomato Rava Dosa
Unlike the basic Rava Dosa this is not crispy, so it will be soft for your little ones taste buds. Here is the recipe for you and  it will be handy when your kid instantly wants Dosa. :-)

Ingredients:
Suji Rava - 1 cup
Rice Flour - 1/2 cup
All Purpose Flour / Maida - 1/2 cup
salt - 1 tsp
Tomato - 1 medium
Yogurt/Curd - 1/2 cup ( adjust accordingly)

How to make it:
1. Grind the Tomato in mixie or magic bullet and set aside
2. Mix the Suji Rava, with Rice Flour and Miada Flour along with Yogurt or Curd.
3. Add salt and mix the tomato juice into mixture.
4. Add water accordingly to make it like very thin batter. Leave it for 30 minutes for more fermentation.
5.  Heat the Griddle and pour some batter on and let it spread quickly.
6. Once it is cooked well roll it and serve with ketchup or some ghee and sugar or some veg curry.

Dosa Served with Green Bean Curry

Tips:
1. To make it less spicy, I have not used green chilies or cumin seeds, if your little one can handle spice, then you can add these to the batter.
2. This mixture is little thick than normal dosa, so you have pour and let it spread quickly and cook slowly.
3. It takes little longer time to get cook compare to normal dosa.
4. The tangy tomato and Yogurt are the secret ingredients and aids in quick fermentation.

Take care until next time

Cauliflower Dosa

These days when i go to office, having evening snack in the canteen became routine, there is a Dosa Corner, where I have seen many variety dosas in their menu, but they will have only 2 or 3 varieties  daily. On that day, I have set my mind for Cauliflower Dosa, I was expecting Cauliflower Curry will be stuffed similar to Potato Stuffing as we do in Masala Dosa. But they scrambled the cauliflower and spread it on top of Dosa and it tasted Great! Looks wise it resembles thick utappam and tastes like Masala Dosa with the Cauliflower Crunch. :-)

As I have my Scrambled Cauliflower recipe handy, I have tried this one morning at home.  VJ did not notice the Cauliflower in this Dosa (who is a  Cauliflower Hater) and finished his breakfast plate, even complimenting, 'This is Great!!!' At the end, when I reveal the secret about stuffed cauliflower, he is surprised that he did not even notice that. :-) Since then, it became our frequent Dosa recipe. Here is how I made, Enjoy!

Ingredients:
Dosa Batter - 1/4 cup
Scrambled Cauliflower - 2 Tbsp
Oil - 1 tsp

Method:

Heat Non-stick pan or Dosa Tawa. Once it is hot add the dosa batter and spread it around on the pan with spatula.

Add the scrambled cauliflower on top and spread it quickly. Press it little with spatula so that it gets stuck to the dosa batter. Add the 1 tsp oil around.

Once it is cooked at bottom (turned into golden color), turn it other side and let the cauliflower cook.

Turn it ( after 1 min) and you can see the crispy cauliflower.

Now roll it into the middle.

Serve Hot this with Ginger Chutney or Pickle.

Take care and Enjoy your weekend!

Omelet Dosa { Video Recipes }

When my mom visited me in Dallas, she shared this recipe with us on one fine morning for breakfast. She saw this recipe some where or in one of the cook show. It's like mixing the american and indian breakfast together in this recipe. And sure became the winner in our house then, as VJ liked it. When ever  I make Dosa batter it runs for 2 days at least. At least once I make sure to do this 'Omelet Dosa' as this is a protein packed breakfast with out loosing your indian twist. When you roll this it can be easily packed into kids lunch box or it can be your grab-and-go breakfast. Here is the recipe, Enjoy!
