Mango Avocado Walnut Milkshake ~ NutriBullet Shakes
One day two of my favorite fruits, Mango and Avocado are very ripe and sitting on the counter top, begging me to make something out of them. As i don't have much time to think to make something exotic, i quickly throw them in nutri bullet and pulsed, with in 5 minutes this milk shake happened and turned out to be my morning bliss. Since then I make this shake at least twice a week, hubby liked this too! I love Nutri Bullet, Worth Buy! Here is the recipe for you, njoy!
Ingredients:
Mango - 1/2
Avocado - 1/2
Walnut Milk - 1 cup
Water - 1 cup
yields: 2 servings
Method:
First add Mango slices and 1/2 Avocado to the Nutribullet and pulse until everything becomes processed. Then add Walnut milk and pulse 1 more time. Finally add 1 cup water and pulse everything together until it gets milk shake consistency. Pour into glasses and enjoy immediately.

- I get Walnut Milk ( no sugar added) from Sprouts - local organic and natural grocery store.
- I don't add sugar or sweetener in my milkshake recipes, as there is enough sugar in the fruits we add, esp Mango in this recipe. If you like or prefer sweetener, add 1 tsp of honey or 2 pitted Dates or try 1 tsp of cane sugar or brown sugar.

Avocado Roasted Veggie Open Toast
Today I am bringing simple breakfast Open Toast recipe with Avocado and Grilled Veggie Combination. This feels so fresh, fills you up, and energizes your morning. Usually Egg and Bread makes most of my breakfast, but sometimes there won't be eggs at hand, then I am clue less what breakfast to make. In those times, this is the rescue recipe, Avocado fills the Protein and healthy fats in my breakfast while replacing the Egg. Serve with 1 cup of freshly squeezed Orange Juice, to make it wholesome breakfast. Here is the simple recipe, njoy!
Ingredients:
Bread - 4 slices ( multi grain)
Avocado - 1
Carrot - 1/2 medium
Bell Pepper - 1/2 medium
Cilantro - 1 Tbsp ( chopped)
Lime Juice - 1/2 tsp
salt - 1 tsp
black pepper - 1/2 tsp
Olive Oil - 1 tsp
serves: 4 people

I am warning you, to have another Avocado ready, because you will be making another batch for sure! :-)

Preparatory Steps:
- Peel Carrot and remove stem & seeds from bell pepper. Wash the veggies and cut them into long strips.
- Add 1/2 tsp olive oil to the pan or to the grill. Add the veggies to the pan and stir fry on high for 2 min until veggies gets tender and slightly roasted on sides. Now Sprinkle half of salt and black pepper and switch off the stove.
- Peel Avocado and cut it into cubes, add to small bowl. Add lime juice, remaining salt and black pepper and mix it well until Avocado gets mashed and becomes like spread. Add 1/2 tsp olive oil and 1 Tbsp of cilantro and give another stir set aside.
- Toast the bread in Regular Bread Toaster or in the Pan you used to roast veggies. Remove the Edges and cut into half length wise.
Now it's time to arrange everything together!
Method:
- Place the bread slices on the serving plate and spread one spoon of Avocado Paste on the Bread Slice. Now arrange Roasted/Grilled Carrot and Bell peppers carefully on top. Garnish with one Cilantro String.
- Repeat the process for all the bread slices. Serve Fresh immediately and indulge into deliciousness.
I am warning you, to have another Avocado ready, because you will be making another batch for sure! :-)

Avocado Egg Breakfast Sandwich {Video Recipes}
To fix a healthy breakfast you don't need to spend elaborate time on it. If you have the right ingredients you can fix your healthy and yummy breakfast in minutes, that is in 5 minutes. This recipe is the proof for that! The Protein in Egg will make it filling for you and with Amazing Avocado inside which is a natural butter you forget that you skimmed on cheese in this sandwich. Enjoy !

Avocado Egg Breakfast Sandwich |
Avocado - 1/2
Boiled Egg - 1
Cibatta Bread - 1 ( 2 slices) ( you can use any Bread or use Croissant even better)
Salt - 1/4 tsp
Black Pepper - 1/4 tsp ( freshly ground)
Paprika - 1/8 tsp ( optional, for more zest)
Cilantro - 1 Tsp ( chopped)
Method:
- Mash 1/2 Avocado in a small bowl. Add Chopped Cilantro, salt and black pepper. Add Paprika, if using. Mix everything very well.
- Chop the boiled egg in to bite size pieces. Add egg pieces to avocado mixture.
- Spread this on slightly toasted Cibatta Bread ( or your favorite bread). ( i have toasted it in popup toaster for a minute)
See it's done now as easy as Step 1, 2, 3. :-) Now take a big bite of Yummoness.... Now that takes care of Healthy Breakfast in minutes which is filling. Njoy!

Mango Dessert Smoothie
This is another great recipe that happened unintentionally. Usually I make yogurt at home, during that process you have to boil milk up to certain extent. But today I forgot to attend while the milk is getting boiled and i ended up with homemade condensed milk. It is so happened at the same time when I was thinking about putting a double riped Mango for good use. Whola! You got me there. Mango Smoothie...What else it can be! Luckily I got some Vanilla Icecream at home ( or you can use creamy yogurt as well). Here is the recipe, Njoy!
Ingredients:
Mango - 1 medium (Fully Riped)
Condensed Milk - 1 cup
Ice Cubes - 1/2 cup
Vanilla Ice Cream - 1 Scoop
Sugar - 1 Tbsp ( or more based on your sweet tooth)
Equipment You Need:
Blender or Magic Bullet
Method:
Peel and Chop the Mango Slices. Place Mango slices and Vanilla Ice Cream in blender and blend it together. Add Sugar and Ice Cubes and Pulse on High. Finally add Condensed Milk and blend again until everything is combined or until you get a creamy smoothie. Pour into Glasses and Serve Immediately ( or Chill in refrigerator until before serving).

Basil Pesto Avocado Sandwich
Some times during my rush mornings { i.e When I am midst of waking up kids, packing lunch boxes, preparing breakfasts} I feel like having elaborate healthy breakfast? Call me Crazy or Weird, Did it ever happen to you! Then don't worry, I got my secret sandwich recipe for you! In this sandwich, Fresh Cucumber and Carrot Slices layered on Basil Pesto and mashed Avocado ( call it a Guacamole) and stuffed in between two slightly toasted Healthy Multi Grain Bread slices.. Hmmm Yum! This sandwich is Crunchy, Fresh, Yummy and Healthy too. Here is the recipe!
Basil Pesto Avoado Sandwich served with Fresh Watermelon cut-up |
Ingredients:
Multi Grain Bread Slices - 2 ( Oat Nut or 15 Grain has 5g protein in each slice)
Basil Pesto Sauce - 1 Tbsp
Fresh Avocado - 1/2
Carrot - 1/2 medium
Cucumber - 1/3 medium
salt - 1/4 tsp
black pepper - 1/8 tsp
coriander - 1 tsp
lime juice - 1/2 tsp
Avocado Paste:
Mash the Avocado in a small bowl. Add salt, black pepper and chopped cilantro mix it very well like a spread and finally add lime juice.
Method:
- Peel the Cucumber and Carrot and finely chop like thin circles.
- Slightly toast the Bread slices i pop-up toaster ( on setting 1)
- Spread Basil Pesto on One Slice and Spread Avocado Paste on another slice.
- Spread cucumber slices as layer and top with carrot slices. Close the sandwich with Avocado Spreaded Bread slice. Press it firm and cut into half or diagonally.

Mango Milkshake - Light Version
It's hard to pass by summer with out Mango in our Indian Kitchens. Last year when we were in India we had a blast in Mango's season and I have tried several new Mango recipes including Mango Icecream. This year though we are missing all those different varieties of Mangoes, reasonably enjoying the Marathon and Alphanso Mangoes that are available here in Dallas region. Today I have tried simple yet superb Mango Milkshake. I have attempted to make a light-lean version, the result is same Bright and Bold color but reduced in calories. Here is the recipe. Njoy!

Ingredients:
Ripe Mango - 1 ( or Fresh Mango Puree - 1 cup)
Low Fat Milk - 1/2 cup
Water -1 cup
Cardamom - 1 pod
Sugar - 1 Tbsp
Ice cubes - 3
*yields - 4 servings
Method:
Grind the Mango Cut up along with Sugar and Cardamom Seeds. Add Low fat Milk and grind again. Now grind with Ice cubes. Finally add water and pulse it on High. Transfer into Glasses, top with 2 ice cubes to keep it cool and serve immediately. ( Or Chil in the refrigerator until before serving).
Enjoy every season with the seasonal fruit!

Hashbrown Sandwich Bites { 5 min Breakfast Recipes }
This morning breakfast sandwich bites can be made before even you finish reading this post. It's literally takes 5 min to fix your breakfast with less than 5 ingredients How Super!!! This recipe will be very handy for your morning rush times, or to break your lunch box packing dilemma for your kiddos. Here is the recipe, Njoy!
Ingredients:
Multi-Grain Bread Slices - 2
Hashbrown Patty - 1
salsa - 1 tbsp
light spicy mayo - 1 tsp (optional)
Method:
This is very easy and simple filling breakfast you can have on-the-go to work. Today I have made this as Morning Moodbooster for my team which brought some cheers and energy in my team.
You don't have to be a Chef or even Cook to Impress your spouse or Boss or your Team, So Go-On and put out smiles on your loved ones, after all it's People who matters, everything else is materialistic...!

Hash Brown Breakfast Sandwich Bites |
Multi-Grain Bread Slices - 2
Hashbrown Patty - 1
salsa - 1 tbsp
light spicy mayo - 1 tsp (optional)
Method:
- Toast the Bread Slices in the Toaster for 1 min ( i keep at level 3) or until it's toasted to light brown. Microwave the Hashbrown Patty for 60 sec to 90 sec.
- Spread the light spicy mayo on one slice of bread. Place the Hashbrown patty on another slice. Add the salsa on top. Top with Mayo spread-ed slice on top and press it tight. Cut into 4 quarters and serve immediately.

Dress up your Oatmeal
We all agree that Oatmeal is one healthy easy energizing breakfast. When I have no big plans for breakfast and/or when i am in rush I always rely on Oatmeal microwavables, (Thanks to Quaker Oatmeal Singles) they make it much more easier. I am lucky that my kids are in love with this quickie breakfast too. Of course I always dress it up with fruits, nuts and honey to make it more appealing for kiddos. See below how i Dressed it up....
Ingredients:
Quaker Oatmeal Single - 1
Green apple cubes - 1/4 cup
Red Apple cubes - 1/4cup
Dry Cranberries - 1 Tbsp
Chopped Pecans - 2 Tbsp
Honey - 1 Tbsp
Milk - 2 Tbsp
How to Make it:
Ta Daaaaa! The wholesome yummy and healthy breakfast bowl is ready in minutes. Hmmm, Yum! Yum! while the milk makes it little creamier, honey does the justice to your sweet teeth, fruits and nuts add crunchiness and the dried cranberries gives the whole new taste to this oatmeal that you will make it more often.
Did i ever tell you the McDonald's Oatmeal is the inspiration for my click and for this post? Yes it is. :-)
Hint:
1. I usually add milk for kiddos. If you want it light, you can skip milk.
2. Why only Pecans? Not such a rule, Experiment with Walnuts and Almonds too.
3. If you are like me, prefer less sweet, skip the Honey part, Maple Brown Sugar flavor already has enough sweet.Or if you try with original flavor, then honey makes it perfect.

Quaker Oatmeal Single - 1
Green apple cubes - 1/4 cup
Red Apple cubes - 1/4cup
